Air Fryer Tofu in Biscuit Crumble Pastry Cups

These delightful Air Fryer Tofu cups combine crispy, flavourful tofu with a savoury biscuit crumble, offering a unique and satisfying culinary experience. The biscuit crumble provides a buttery, crumbly base, while the air-fried tofu adds a delightful crunch and savoury taste. These cups are perfect as an appetiser, a light lunch, or a snack.

Ingredients:

For the Biscuit Crumble Pastry:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup cold butter, cut into cubes
  • 1/2 cup milk

For the Air Fryer Tofu:

  • 1 (14-16 ounce) block extra-firm tofu, pressed
  • 1 tablespoon olive oil
  • 1 teaspoon soy sauce or tamari
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 tablespoon cornstarch

Instructions:

Make the Biscuit Crumble Pastry:

  1. Preheat oven to 200°C (400°F).
  2. In a large bowl, whisk together the flour, baking powder, and salt.
  3. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. Gradually add the milk, stirring until a soft dough forms.
  5. On a lightly floured surface,1 gently roll out the dough to about 1/4-inch thickness.
  6. Use a 10cm (4-inch) round cookie cutter to cut out circles.
  7. Press each circle into a muffin tin to form a cup.

Prepare the Tofu:

  1. Cut the pressed tofu into 1-inch cubes.
  2. In a bowl, toss the tofu with olive oil, soy sauce, garlic powder, and onion powder.
  3. Sprinkle cornstarch over the tofu and toss to coat.

Assemble and Air Fry:

  1. Preheat the air fryer to 200°C (400°F).
  2. Divide the tofu evenly among the biscuit crumble cups.
  3. Air fry for 15-20 minutes, or until the tofu is golden brown and the biscuit cups are cooked through.

Tips:

  • Pressing Tofu: Ensure the tofu is well-pressed to remove excess moisture for the best crispy texture.
  • Biscuit Crumble: Do not over-mix the biscuit dough, as this can result in a tough pastry.
  • Tofu Seasoning: Feel free to experiment with different seasonings for the tofu, such as smoked paprika, chilli powder, or curry powder.
  • Serving: These cups are delicious served warm. Garnish with fresh herbs like parsley or cilantro.
