Air Fryer Kiwi Fruit Cookies

These Air Fryer Kiwi Fruit Cookies are a surprisingly delightful treat! Thin slices of fresh kiwi are gently air-fried until slightly chewy on the edges and tender in the centre, concentrating their sweet-tart flavour. The natural sugars caramelise a touch, creating a unique texture and taste unlike any traditional cookie. They're a simple and healthy way to enjoy the vibrant taste of kiwi, perfect for a light snack or a fun, fruity bite.

Yields: Approximately 12-15 cookies

Prep time: 5 minutes

Cook time: 8-12 minutes per batch

Ingredients:

  • 2 ripe but firm kiwi fruits, peeled
  • Optional: 1-2 teaspoons granulated sugar (for extra sweetness)
  • Optional: A pinch of cinnamon or cardamom (for added flavour)

Instructions:

1. Prepare the Kiwi Slices:

  • Slice the peeled kiwi fruits into thin rounds, about 1/8 to 1/4 inch thick.

2. Arrange on Air Fryer Basket:

  • Line your air fryer basket with parchment paper (optional, but helps prevent sticking).
  • Arrange the kiwi slices in a single layer on the parchment paper, ensuring there is some space between each slice for even air circulation.

3. Add Optional Flavourings:

  • If desired, lightly sprinkle the kiwi slices with granulated sugar and/or a pinch of cinnamon or cardamom.

4. Air Fry the Kiwi:

  • Preheat your air fryer to 150°C (300°F).
  • Carefully place the air fryer basket into the preheated air fryer.
  • Air fry for 8-12 minutes, flipping the kiwi slices halfway through, until the edges start to look slightly translucent and the centres are still a bit soft but not wet. The exact time will depend on the thickness of your kiwi slices and your air fryer model.

5. Cool and Enjoy:

  • Once cooked, carefully remove the kiwi slices from the air fryer basket and transfer them to a wire rack to cool completely. They will firm up slightly as they cool.
  • Enjoy these unique Air Fryer Kiwi Fruit Cookies as a healthy and flavourful snack!

Tips:

  • Kiwi Ripeness: Use kiwi that is ripe but still firm. Overripe kiwi will be too soft and may not hold its shape well during air frying.
  • Slice Thickness: Consistent slice thickness will ensure even cooking.
  • Don't Overcrowd: Avoid overcrowding the air fryer basket, as this will steam the kiwi instead of allowing it to dry and become slightly chewy. Cook in batches if necessary.
  • Adjust Cooking Time: Keep a close eye on the kiwi while it's air frying, as cooking times can vary. You want them to be slightly dried but not crispy.
  • Storage: These cookies are best enjoyed fresh. However, you can store them in an airtight container at room temperature for a day or two, but they may lose some of their chewy texture.
  • Experiment with Flavours: Try other spices like ginger or a squeeze of lime juice before air frying for different flavour variations.
