Imagine this: Warm, flaky pastry cups filled with a smooth, fragrant custard infused with the tropical notes of pandan and the creamy richness of coconut. These little puddings are a delightful explosion of Southeast Asian-inspired flavours, made surprisingly easy in your air fryer.

Yields: 6-8 cups

Cook time: 15-18 minutes

Ingredients:

  • 6-8 ready-made flaky pastry cups (or shortcrust pastry, cut into circles)
  • 1 cup coconut milk
  • 1/4 cup granulated sugar
  • 2 large egg yolks
  • 1 tablespoon cornstarch
  • 1 teaspoon pandan extract (adjust to taste)
  • Pinch of salt
  • Optional: Toasted shredded coconut for garnish

Instructions:

1. Prepare the Pastry Cups:

  • If using pre-made pastry cups, arrange them in your air fryer basket.
  • If using pastry sheets, cut out circles large enough to line muffin tin cavities. Gently press them into the cavities.

2. Make the Pandan Coconut Custard:

  • In a medium saucepan, whisk together the coconut milk, sugar, egg yolks, cornstarch, pandan extract, and salt until smooth.
  • Cook over medium-low heat, stirring constantly, until the mixture thickens and coats the back of a spoon. Do not boil.
  • Remove from heat and let it cool slightly.

3. Fill and Air Fry:

  • Carefully pour the warm custard into the pastry cups, filling them almost to the top.
  • Preheat your air fryer to 160°C (320°F).
  • Place the filled pastry cups in the air fryer basket, ensuring they are not overcrowded. You may need to work in batches.
  • Air fry for 15-18 minutes, or until the pastry is golden brown and the custard is set but still slightly wobbly in the centre.

4. Cool and Serve:

  • Carefully remove the Pandan Coconut Dream Cups from the air fryer and let them cool slightly in the basket before transferring them to a wire rack to cool completely.
  • Garnish with toasted shredded coconut, if desired. Serve warm or chilled.
