The air fryer ensures a beautifully golden and crisp exterior, while the warm, jammy berry filling provides a delightful contrast. Ingredients:


  • 1 sheet (approx. 250g) ready-made puff pastry, thawed but still cold
  • 1 cup mixed fresh or frozen berries (strawberries, blueberries, raspberries, blackberries, or a combination)
  • 2 tbsp granulated sugar (adjust to the sweetness of your berries)
  • 1 tbsp cornstarch (or arrowroot powder)
  • 1 tsp fresh lemon juice
  • 1/2 tsp vanilla extract
  • 1 large egg, beaten (for egg wash)
  • 1 tbsp granulated sugar, for sprinkling (optional)


Instructions & Method:


1. Prepare the Berry Filling:

* In a medium saucepan, combine the mixed berries, granulated sugar, cornstarch, and lemon juice.

* If using frozen berries, there's no need to thaw them first.

* Cook over medium heat, stirring occasionally, until the berries release their juices and the mixture begins to thicken. This should take about 5-7 minutes.

* Gently mash some of the berries with the back of a spoon to create a jammy consistency.

* Remove from heat and stir in the vanilla extract. Let the filling cool slightly while you prepare the pastry.

2. Assemble the Turnovers:

* Lightly flour a clean work surface. Unfold the thawed puff pastry sheet.

* Using a pizza cutter or a sharp knife, cut the puff pastry into 4 equal squares. For smaller turnovers, you can cut it into 6 or 9 squares.

* Place a spoonful (about 2-3 tablespoons, depending on the size of your squares) of the slightly cooled berry filling in the centre of each pastry square, leaving a border of about 1/2 inch around the edges.

* Fold the pastry square diagonally to form a triangle (or fold in half to create rectangles).

* Press the edges firmly with your fingers to seal. For extra security and a decorative touch, use the tines of a fork to crimp the edges.

* Cut a small slit on the top of each turnover with a sharp knife. This allows steam to escape during cooking.

3. Air Fry the Turnovers:

* Preheat your air fryer to 180°C (350°F) for 3-5 minutes.

* Brush the tops of the assembled turnovers with the beaten egg wash.

* If desired, sprinkle a little extra granulated sugar over the egg wash for added sweetness and shine.

* Carefully place the turnovers in a single layer in the air fryer basket, ensuring they are not touching. You will likely need to cook them in batches.

* Air fry for 12-18 minutes, or until the turnovers are puffed up, golden brown, and the filling is bubbling slightly. The exact cooking time will depend on your air fryer model and the size of your turnovers.

4. Cool and Serve:

* Carefully remove the golden brown berry turnovers from the air fryer and transfer them to a wire rack to cool slightly.

* Serve warm. They are delicious on their own or with a dollop of whipped cream, a drizzle of icing, or a scoop of vanilla ice cream.
