Transform simple pineapple into a caramelised, tropical sensation with this quick and easy air fryer recipe. The high heat of the air fryer mimics grilling, bringing out the natural sweetness of the pineapple while creating beautiful char marks, all complemented by a delicate dusting of toasted coconut flakes. It's a perfect light dessert, side dish, or even a fancy breakfast addition!


Ingredients:


  • 1 ripe pineapple, cored and cut into 1/2-inch thick rings or spears
  • 1 tbsp melted unsalted butter or coconut oil
  • 1 tbsp brown sugar (optional, for extra caramelisation)
  • 1/2 tsp ground cinnamon (optional)
  • 1/4 cup unsweetened shredded coconut flakes


Instructions & Method:


1. Prepare the Pineapple:

* If using fresh pineapple, ensure it's cored and sliced into even 1/2-inch thick rings or spears. Pat the pineapple pieces dry with a paper towel. This helps with caramelisation.

* In a medium bowl, combine the melted butter or coconut oil, brown sugar (if using), and cinnamon (if using).

* Add the pineapple slices to the bowl and gently toss to coat evenly.

2. Toast the Coconut Flakes:

* While the pineapple is marinating, you can toast the coconut flakes. Place the shredded coconut flakes in a dry pan over medium-low heat.

* Stir frequently for 2-4 minutes until golden brown and fragrant. Be careful, they can burn quickly! Alternatively, you can toast them in the air fryer at 150°C (300°F) for 2-3 minutes, shaking the basket frequently. Set aside.

3. Air Fry the Pineapple:

* Air fry for 8-12 minutes, flipping the pineapple halfway through (around the 4-6 minute mark). Look for beautiful golden-brown edges and slight charring, indicating caramelisation. The exact time will depend on the thickness of your pineapple slices and your air fryer model.

4. Assemble and Serve:

* Once the pineapple is cooked, immediately transfer it to a serving platter.
