Yields: 2-3 servings

Prep time: 20 minutes

Cook time: 8-10 minutes (air fryer)

Ingredients

For the Avocado Fries:

  • 2 ripe but firm avocados, halved, pitted, and sliced into 1/2-inch thick fries
  • 1/2 cup all-purpose flour
  • 1 large egg, beaten
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup panko breadcrumbs
  • 2 tablespoons finely chopped fresh herbs (e.g., parsley, thyme, oregano, or a mix)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray (preferably olive oil or avocado oil)

For the Lemon Aioli:

  • 1/2 cup mayonnaise1
  • 1 tablespoon fresh lemon juice
  • 1 clove garlic, minced2
  • 1/4 teaspoon Dijon mustard (optional, for a little tang)
  • Pinch of salt
  • Pinch of black pepper

Instructions & Method

  1. Prepare the Lemon Aioli: In a small bowl, whisk together the mayonnaise, lemon juice, minced garlic, Dijon mustard (if using), salt, and pepper until smooth and well combined. Cover and refrigerate until ready to serve to allow the flavours to meld.
  2. Set up the Coating Stations: Set up three shallow dishes or plates.
    • In the first dish, place the all-purpose flour.
    • In the second dish, whisk the beaten egg.
    • In the third dish, combine the grated Parmesan cheese, panko breadcrumbs, chopped fresh herbs, garlic powder, salt, and black pepper. Mix well.
  3. Coat the Avocado Fries:
    • Gently dredge each avocado slice in the flour, ensuring it's evenly coated. Shake off any excess flour.
    • Next, dip the floured avocado slice into the beaten egg, making sure it's fully coated. Allow any excess egg to drip off.
    • Finally, press the egg-coated avocado slice firmly into the Parmesan herb breadcrumb mixture, ensuring the entire surface is well coated. Repeat this process for all the avocado slices.
  4. Air Fry the Avocado Fries:
    • Preheat your air fryer to 200°C (390°F).
    • Lightly spray the air fryer basket with cooking spray.
    • Arrange the coated avocado fries in a single layer in the air fryer basket, being careful not to overcrowd them. You may need to cook them in batches.
    • Spray the top of the avocado fries with a little more cooking spray.
    • Air fry for 8-10 minutes, flipping them halfway through, until they are golden brown and crispy. Keep a close eye on them as cooking times3 can vary depending on your air fryer and the ripeness of the avocado.
  5. Serve Immediately: Once the avocado fries are golden and crispy, carefully remove them from the air fryer basket. Serve them immediately while they are still warm and crunchy, with the chilled Lemon Aioli for dipping.

Tips for Success

  • Avocado Ripeness: Use avocados that are ripe but still firm. Overripe avocados will be too soft and may fall apart during coating and cooking.
  • Panko for Crunch: Panko breadcrumbs provide a much crispier coating than regular breadcrumbs.4 If you don't have panko, you can use regular breadcrumbs, but the texture might be slightly different.
  • Don't Overcrowd: Avoid overcrowding the air fryer basket to ensure even cooking and crisping. Cook in batches if necessary.
  • Gentle Handling: Avocado is delicate, so handle the slices gently during the coating process to prevent them from breaking.
  • Fresh Herbs are Key: Fresh herbs add a bright and vibrant flavour to the crust. If you only have dried herbs, use about half the amount.
  • Adjust Seasoning: Taste the Parmesan herb mixture and the Lemon Aioli and adjust the seasoning (salt, pepper, garlic, lemon) to your liking.
  • Serve Immediately: These avocado fries are best enjoyed immediately after cooking when the crust is at its crispiest. They may soften as they cool.
  • Variations: You can experiment with different cheeses (e.g., Pecorino Romano) or add a pinch of red pepper flakes to the crust for a little heat.
  • Storage: It's best to consume these immediately. However, if you have leftovers, store them in an airtight container in the refrigerator. They will lose their crispness but can be reheated in the air fryer for a few minutes, though the texture won't be the same as freshly made.
