Ingredients

For the Churro Bites:

  • 1 cup water
  • 1/4 cup unsalted butter
  • 2 tablespoons granulated sugar

  • 1/2 cup (about 85g) good quality dark chocolate (60-70% cacao), finely chopped
  • 1/2 cup heavy cream
  • 1 tablespoon unsalted butter
  • 1-2 tablespoons granulated sugar (adjust to taste)
  • 1/4 teaspoon ground cayenne pepper (or more, to taste)
  • Pinch of sea salt
  • 1/2 teaspoon vanilla extract

Instructions & Method

Part 1: Prepare the Churro Dough

  1. Boil Water Mixture: In a medium saucepan, combine water, butter, 2 tablespoons granulated sugar, and salt. Bring to a rolling boil over medium heat, stirring until the butter is melted and sugar is dissolved.
  2. Add Flour: Remove the saucepan from the heat. Add the all-purpose flour all at once. Stir vigorously with a wooden spoon until the mixture forms a ball and pulls away from the sides of the pan. This is called a "roux."
  3. Cook the Roux: Return the saucepan to low heat and continue to stir for 1-2 minutes to cook out some of the moisture from the flour. This step is crucial for crispy churros.
  4. Cool Slightly: Transfer the dough to a large mixing bowl. Let it cool for 5 minutes.
  5. Add Egg and Vanilla: Add the egg and vanilla extract to the dough. Beat with a wooden spoon or a stand mixer with a paddle attachment on low speed until the egg is fully incorporated and the dough is smooth and sticky. It might look curdled at first, but keep mixing until it comes together.

  1. Prepare Coating: While the churros are air frying, combine 1/2 cup granulated sugar and 1 tablespoon ground cinnamon in a shallow dish or a paper bag.
  2. Coat Churros: As soon as the churro bites come out of the air fryer, while still warm, toss them gently in the cinnamon sugar mixture until evenly coated.

Part 4: Make the Spicy Chocolate Dipping Sauce

  1. Heat Cream: In a small saucepan, heat heavy cream, butter, and 1-2 tablespoons granulated sugar over medium-low heat until the butter is melted and the mixture is warm (do not boil).
  2. Melt Chocolate: Remove from heat. Add the finely chopped dark chocolate, cayenne pepper, and sea salt. Let sit for 2-3 minutes to allow the chocolate to melt.
