Ingredients:
For the Sweet Hummus:
- 1 (15-ounce) can chickpeas, rinsed and drained
- 1/4 cup full-fat coconut milk (from the solid cream at the top of a chilled can, or regular for a thinner consistency)
- 2 tablespoons maple syrup (or honey/agave nectar)
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- Pinch of salt
For the Flatbreads:
- 2 pre-made flatbreads (such as naan, pita bread, or even large tortillas)
- 1 tablespoon olive oil (or melted coconut oil)
For Topping (choose your favourites!):
- 1/2 cup mixed berries (strawberries, blueberries, raspberries)
- 1/2 banana, sliced
- 1/4 cup kiwi, diced
- 1 tablespoon chopped nuts (almonds, pistachios, walnuts)
- 1 tablespoon shredded coconut
- Drizzle of honey or maple syrup
Instructions & Method:
- Make the Sweet Hummus: In a food processor, combine the rinsed and drained chickpeas, coconut milk, maple syrup, vanilla extract, cinnamon, and salt. Process until completely smooth and creamy. Scrape down the sides as needed. Taste and adjust sweetness or spice if desired. Set aside.
- Note: For an extra smooth hummus, you can peel the skins off the chickpeas before blending, though this is optional.
- Prepare the Flatbreads: Lightly brush both sides of each flatbread with olive oil. This helps them crisp up beautifully in the air fryer.
- Air Fry the Flatbreads: Preheat your air fryer to 350°F (175°C) for 3 minutes.
- Place one flatbread in the air fryer basket (cook one at a time if your basket is small).
- Air fry for 3-5 minutes, flipping halfway through, until golden brown and slightly crispy. The exact time will depend on the thickness of your flatbread. You want it cooked but still pliable enough not to crack when spread.
- Remove from the air fryer and repeat with the second flatbread.
- Assemble the Flatbreads: Once the flatbreads are cooled enough to handle but still warm, spread a generous layer of the sweet hummus over each one.
- Add Toppings: Arrange your chosen fresh fruits, chopped nuts, and shredded coconut (if using) artfully over the sweet hummus.
- Serve: Drizzle with a little extra honey or maple syrup, if desired, and serve immediately.
Tips:
- Hummus Consistency: If your hummus is too thick, add a tiny bit more coconut milk (or even a tablespoon of water) until it reaches your desired creamy consistency. If it's too thin, add a few more chickpeas.
- Fruit Combinations: Be creative with your fruit! Other great options include sliced peaches, grapes, mango, or even a sprinkle of pomegranate seeds.
- Spice it Up: A tiny pinch of cardamom or nutmeg in the sweet hummus can add another layer of warm spice.
- Nut-Free Option: Simply omit the nuts or substitute with seeds like pumpkin or sunflower seeds.
- Make Ahead: The sweet hummus can be made up to 3-4 days in advance and stored in an airtight container in the refrigerator. Air fry the flatbreads and assemble right before serving for best results.
- Serving Temperature: While best served immediately, these flatbreads are also delicious at room temperature, making them great for picnics or packed lunches.
- Dessert vs. Snack: For a more decadent dessert, consider adding a sprinkle of mini chocolate chips or a dollop of whipped cream on top. For a healthier snack, stick to just the fruit and a light drizzle.
