The air fryer works its magic, tenderising bell peppers and onion while toasting the feta to a delightful, salty crisp. Blended together, these simple ingredients create a dip that's creamy, tangy, and subtly sweet, with a depth of flavour that tastes like it's been slow-roasted for hours. Ingredients

  • 2 large red bell peppers, cut into 1-inch pieces
  • 1/2 large yellow onion, roughly chopped
  • 1 block (7-8 oz) feta cheese
  • 2 cloves garlic, peeled
  • 2 tablespoons olive oil
  • 1/2 teaspoon black pepper
  • Optional: a squeeze of lemon juice, fresh dill, or red pepper flakes for serving

Method

  1. Prep the veggies: Toss the bell peppers, onion, garlic, and feta cheese in a bowl. Drizzle with olive oil and sprinkle with black pepper, mixing until everything is coated.
  2. Air Fry: Place the mixture in a single layer in your air fryer basket. Cook at 380°F (195°C) for 15-20 minutes, shaking the basket halfway through. The vegetables should be soft and slightly charred, and the feta should be golden and a little crispy.
  3. Blend: Carefully transfer the air-fried mixture into a blender or food processor. Blend until it reaches your desired consistency, from smooth and creamy to slightly chunky.
  4. Serve: Pour the warm dip into a serving bowl. Garnish with a drizzle of olive oil, a sprinkle of fresh dill, or a pinch of red pepper flakes if desired. Serve immediately with warm pita bread, crackers, or vegetable sticks.

Tips

  • For an extra smoky flavour, add a pinch of smoked paprika to the veggies before air frying.
  • Don't worry if the feta breaks apart in the air fryer; it's all going to be blended together anyway.
  • If you want a smoother consistency, add a tablespoon of water or yogurt while blending.
  • This dip is best served warm, but you can also enjoy it chilled. It stores well in an airtight container in the fridge for up to 3 days.
