These sweet spring rolls offer a delightful twist on a classic dessert. The creamy, caramelised filling of mashed banana, crunchy walnuts, and a hint of cinnamon is wrapped in a crisp, golden shell. Using the air fryer creates a healthier, less oily version that's ready in minutes, making it a perfect quick snack or an impressive, easy dessert. They're best served warm with a drizzle of honey or a scoop of vanilla ice cream.

  • Filling:
    • 2 ripe bananas, mashed
    • cup chopped walnuts (or pecans)
    • 2 tablespoons brown sugar
    • teaspoon ground cinnamon
    • 1 teaspoon fresh lime or lemon juice
  • Assembly:
    • 8 standard-sized spring roll wrappers (thawed if frozen)
    • 1 egg, beaten (for an egg wash) OR  tablespoon oil (vegetable or canola) for brushing

  1. Prepare the Filling: In a medium bowl, combine the mashed bananas, chopped walnuts, brown sugar, cinnamon, and lime/lemon juice. Mix well until everything is evenly incorporated.
  2. Assemble the Rolls:
    • Lay a spring roll wrapper on a clean, flat surface with one corner pointing toward you (like a diamond).
    • Spoon about 2 tablespoons of the banana mixture near the corner closest to you.
    • Fold the bottom corner up over the filling.
    • Fold in the left and right corners toward the centre.
    • Roll the wrapper tightly away from you until you reach the final corner.
    • Dip your finger in the egg wash or water and brush it lightly on the final corner to seal the roll completely. Repeat with the remaining wrappers and filling.
  3. Air Fry:
    • Preheat your air fryer to  ().
    • Lightly brush the assembled spring rolls with the beaten egg wash (for a golden colour) or the oil (for extra crispness).
    • Place the rolls in the air fryer basket in a single layer, ensuring they don't touch. You may need to cook them in batches.
    • Air fry for 6-8 minutes, flipping them halfway through, until they are golden brown and crispy.
  4. Serve: Carefully remove the hot spring rolls and let them cool for a minute or two before serving.

Tips for Success

  • Wrapper Choice: Use spring roll wrappers, not the thicker egg roll wrappers, for the crispiest result. Keep unused wrappers covered with a damp cloth while assembling to prevent them from drying out and cracking.
  • Seal Tightly: A tight seal is crucial to prevent the sweet filling from leaking out during cooking. A small amount of water can be used as a sealant if you prefer not to use an egg wash.
  • Do Not Overfill: Using too much filling will make it hard to roll and increase the chances of the roll bursting in the air fryer. Stick to about 2 tablespoons per roll.
  • Variations: For an extra decadent touch, add a few chocolate chips to the banana mixture before rolling. You can also substitute the walnuts with shredded coconut or chopped peanuts.
