Air Fryer Rambutan Cupcakes

Imagine tender, moist cupcakes infused with the delicate, sweet-tart essence of fresh rambutan, all achieving a beautifully golden and perfectly baked finish in the convenient air fryer. The rambutan, with its unique translucent flesh and fragrant, subtly floral notes, lends a tropical twist that's both refreshing and delightfully unexpected in a cupcake. This recipe transforms the humble cupcake into a miniature tropical escape, offering a light texture and a vibrant flavour profile that dances between lychee and grape with a hint of rose. It's a fantastic way to showcase this intriguing fruit in a dessert that's both innovative and incredibly delicious.


Ingredients:

  • 21 cup all-purpose flour
  • 41 teaspoon baking powder
  • Pinch of salt
  • 41 cup unsalted butter, softened
  • 41 cup granulated sugar
  • 1 large egg
  • 41 teaspoon vanilla extract
  • 2 tablespoons milk
  • 21 cup fresh rambutan, peeled, pitted, and finely diced
  • Optional: Cream cheese frosting and a few rambutan pieces for garnish

Method:

  1. Whisk together flour, baking powder, and salt in a small bowl.
  2. In a separate medium bowl, cream the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined; do not over-mix.
  5. Gently fold in the finely diced rambutan.
  6. Line your air fryer-safe muffin tin or silicone cupcake moulds with paper liners. Fill each liner about two-thirds full with batter. (You'll likely need to cook these in batches, depending on the size of your air fryer).
  7. Preheat the air fryer to 300F (150C).
  8. Air Fry for 10-15 minutes, or until a toothpick inserted into the centre of a cupcake comes out clean. Cooking times can vary greatly based on your air fryer and the size of your cupcakes.
  9. Cool completely on a wire rack before frosting, if desired, and garnishing with fresh rambutan pieces.

Tips:

  • Ensure the rambutan is finely diced to distribute the flavour evenly and prevent the cupcakes from becoming too wet.
  • Do not overcrowd the air fryer basket. Cook in small batches for even baking.
  • Keep an eye on the cupcakes! Air fryers cook faster than conventional ovens, and temperatures can fluctuate.1 Start checking for doneness around the 10-minute mark.
  • A light cream cheese frosting would beautifully complement the rambutan's subtle sweetness.
