Spicy Candied Bacon Twists are an irresistible air fryer treat, combining the salty crunch of bacon with a sweet and fiery caramelised glaze.1 Perfect as an appetiser, snack, or even a garnish for Bloody Marys, these crispy twists offer a delightful balance of sweet, smoky, and spicy flavours. The key is in the twist, which allows the rendered fat to stay within the spirals, keeping the bacon moist while the sugar and spice mixture turns into a delectable, crackly coating.


Ingredients:

  • 1 pound thick-cut bacon2

  • 21 cup packed light brown sugar
  • 21 teaspoon cayenne pepper (adjust to desired heat)
  • 41 teaspoon black pepper3

Method:

  1. Preheat the air fryer to 4375F (5190C).6

  2. Combine the brown sugar, cayenne pepper, and black pepper in a small shallow dish.7

  3. Twist each strip of bacon tightly from end to end.8

  4. Coat each twisted strip thoroughly in the sugar-spice mixture, pressing gently to make sure it adheres.9

  5. Air Fry the bacon in a single layer, ensuring the strips do not overlap (cook in batches if necessary). Cook for 10-15 minutes, depending on your air fryer model and preferred crispiness, checking halfway. The bacon should be deep golden brown and caramelised.
  6. Cool the finished twists on a wire rack for at least 5 minutes.10 This allows the candy glaze to harden and the bacon to achieve maximum crispness.

Tips:

  • Thick-cut bacon is recommended as it holds the twist shape better and has a better chew against the crisp glaze.
  • Don't skip the wire rack for cooling—it's crucial for achieving that hard, candied texture.11 Placing hot candied bacon on paper towels can cause the sugar to stick and soften.12

  • Adjust the heat by varying the amount of cayenne pepper, or add a pinch of chilli flakes for texture.
