Air Fryer Soft Bread Tiger Skin

This recipe combines the convenience of an air fryer with the delightful texture of tiger bread, featuring a soft interior and a crackled, flavourful crust.

Yields: 1 loaf

Prep time: 30 minutes (plus rising time)

Cook time: 25-30 minutes

Ingredients:

For the Dough:

  • 300g (2 1/2 cups) strong bread flour
  • 7g (2 1/4 tsp) instant yeast
  • 1 tsp sugar
  • 1 tsp salt
  • 200ml (3/4 cup + 2 tbsp) warm milk
  • 2 tbsp unsalted butter, melted

For the Tiger Skin Topping:

  • 50g (1/3 cup) rice flour
  • 1 tsp sugar
  • 1/4 tsp salt
  • 1 tsp instant yeast
  • 1 tbsp sesame oil
  • 50-60ml (3-4 tbsp) warm water

Equipment:

  • Air fryer
  • Mixing bowls
  • Measuring cups and spoons
  • Parchment paper

Instructions:

1. Prepare the Dough:

  • In a large mixing bowl, combine the bread flour, instant yeast, sugar, and salt.
  • Add the warm milk and melted butter. Mix until a shaggy dough forms.
  • Knead the dough on a lightly floured surface for 5-7 minutes, until smooth and elastic.
  • Place the dough in a lightly oiled bowl, cover,1 and let rise in a warm place for2 about 1 hour, or until doubled in size.

2. Make the Tiger Skin Topping:

  • While the dough is rising, prepare the topping. In a small bowl, whisk together the rice flour, sugar, salt, and instant yeast.
  • Add the sesame oil and gradually add the warm water, mixing until you have a smooth, spreadable paste. The consistency should be similar to thick paint.

3. Shape and Top the Loaf:

  • Once the dough has doubled, gently punch it down to release the air.
  • Shape the dough into a round or oval loaf.
  • Line your air fryer basket with parchment paper. Place the loaf in the basket.
  • Brush the tiger skin paste evenly over the top of the loaf.

4. Air Fry:

  • Preheat your air fryer to 160°C (320°F) if your air fryer requires preheating.
  • Air fry for 25-30 minutes, or until the loaf is golden brown and the topping is cracked. Check the loaf after 20 minutes; if it's browning too quickly, you can loosely cover it with foil.
  • Carefully remove the loaf from the air fryer and let it cool on a wire rack before slicing.

  • Warm liquids: Make sure the milk is warm (not hot) to activate the yeast.
  • Kneading: Knead the dough well to develop gluten, resulting in a soft and chewy bread.
  • Topping consistency: Adjust the amount of water in the topping to achieve a spreadable consistency.

  • Cooling: Allow the bread to cool completely before slicing for the best texture.
