Ingredients:

For the BBQ Grilled Prawns:

  • 1 lb large prawns, peeled and deveined (leave tails on if desired)
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon chilli flakes (optional, for a little heat)
  • Salt and freshly ground black pepper to taste
  • Wooden or metal skewers (if using wooden skewers, soak them in water for at least 30 minutes to prevent burning)

For the Mango Salsa:

  • 1 ripe mango, peeled and diced
  • 1/2 red onion, finely diced
  • 1/4 cup chopped fresh cilantro
  • 1 jalapeño pepper, seeded and finely minced (optional, for heat)
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • Pinch of salt

Instructions:

Preparation:

  1. Prepare the Prawn Marinade: In a medium mixing bowl, whisk together the olive oil, lime juice, smoked paprika, garlic powder, chilli flakes (if using), salt, and pepper.
  2. Marinate the Prawns: Add the peeled and deveined prawns to the marinade. Toss gently to ensure they are evenly coated. Cover the bowl and refrigerate for at least 15 minutes, or up to 30 minutes. Do not marinate for too long, as the lime juice can start to "cook" the prawns.
