This recipe takes the classic flavours of gingerbread and gives them a tropical, modern twist with fresh mango and the magic of the air fryer. The result is a delicious, fancy, and surprisingly simple dessert that’s perfect for a special occasion or a cozy treat. The air fryer creates a beautifully crisp exterior while keeping the inside tender and moist, a delightful contrast to the sweet mango and spicy gingerbread.


Ingredients

For the Gingerbread:

  • 1/2 cup (113g) unsalted butter, softened
  • 1/4 cup (50g) granulated sugar
  • 1/2 cup (170g) unsulphured molasses
  • 1 large egg
  • 1 1/2 cups (180g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup (120ml) hot water

For the Mango Topping:

  • 1 large, ripe mango, peeled and diced into 1/2-inch cubes
  • 1 tablespoon light brown sugar
  • 1 teaspoon fresh lime juice
  • Pinch of ground ginger

For Garnish (Optional but Recommended):

  • Whipped cream or vanilla ice cream
  • Toasted coconut flakes
  • Fresh mint leaves

Instructions and Method

1. Prepare the Gingerbread Batter:

  • In a large bowl, using a hand mixer or a stand mixer with the paddle attachment, cream the softened butter and granulated sugar until light and fluffy.
  • Beat in the molasses and the egg until well combined.
  • In a separate medium bowl, whisk together the flour, baking soda, ground ginger, cinnamon, cloves, nutmeg, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.
  • Slowly pour in the hot water and mix until the batter is smooth. The batter will be thin, but this is normal.

2. Prepare the Mango Topping:

  • In a small bowl, gently toss the diced mango with the brown sugar, lime juice, and a pinch of ground ginger. Set aside.

3. Air Fryer Method:

  • Preheat your air fryer to 320°F (160°C).
  • Lightly grease two 6-inch round air fryer-safe baking pans or four individual 4-inch ramekins.
  • Divide the gingerbread batter evenly among the prepared pans.
  • Carefully place the baking pan(s) in the air fryer basket. Cook for 15-20 minutes, or until a toothpick inserted into the centre comes out clean. The time may vary depending on your air fryer model and the size of your pans.
  • Once baked, carefully remove the gingerbread from the air fryer and let it cool in the pan for 5 minutes before inverting it onto a cooling rack.

4. Assemble and Serve:

  • To serve, place a slice of the warm gingerbread on a plate.
  • Spoon a generous amount of the prepared mango topping over the gingerbread. The warmth of the gingerbread will slightly soften the mango, releasing its fragrant juices.
  • Top with a dollop of whipped cream or a scoop of vanilla ice cream.
  • Sprinkle with toasted coconut flakes and garnish with a fresh mint leaf for a beautiful and delicious finish.

  • Don't Over-mix: Over-mixing the batter can lead to a tough gingerbread. Mix until just combined for a tender, moist crumb.
