Air Fryer "Sno-Ball" Cake Bites

Imagine fluffy, tender vanilla cake morsels, each delicately enrobed in a sweet marshmallow-coconut coating, all brought to life with the speed and efficiency of your air fryer. These bites capture the nostalgic charm of a classic Sno Ball, transforming it into a convenient, bite-sized delight that's perfect for parties, lunchboxes, or a delightful solo indulgence. The air fryer creates a wonderfully light and even bake for the cake, ensuring each piece is soft and moist before it's adorned with its signature snowy exterior. It's a playful fusion of textures and flavours – the subtle vanilla cake, the airy marshmallow, and the chewy, sweet coconut – making every bite a mini celebration.

Ingredients:

  • 21 cup all-purpose flour
  • 41 teaspoon baking powder
  • Pinch of salt
  • 41 cup unsalted butter, softened
  • 41 cup granulated sugar
  • 1 large egg
  • 21 teaspoon vanilla extract
  • 2 tablespoons milk
  • For Coating:
    • 21 cup mini marshmallows
    • 1 tablespoon milk or cream
    • 21 cup shredded sweetened coconut

Method:

  1. Prepare Cake Batter: In a small bowl, whisk together flour, baking powder, and salt. In a separate medium bowl, cream softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract. Gradually add the dry ingredients to the wet ingredients, alternating with 2 tablespoons of milk, mixing until just combined.
  2. Air Fry Cake Bites: Grease and flour a small, air fryer-safe baking pan or silicone mould (you can also use mini muffin moulds for small bites, adjusting cooking time). Pour the batter into the prepared pan, filling about two-thirds full.
  3. Preheat the air fryer to 300F (150C).
  4. Air Fry for 12-18 minutes (if using a small pan) or 8-12 minutes (for mini muffins), or until a toothpick inserted into the centre comes out clean. Let cool completely.
  5. Cut & Coat: Once cooled, cut the cake into bite-sized squares or use a small cookie cutter for round shapes.
  6. In a microwave-safe bowl, melt the mini marshmallows with 1 tablespoon of milk/cream for 30-45 seconds, stirring until smooth.
  7. Place the shredded coconut in a shallow dish.
  8. Dip each cake bite into the melted marshmallow mixture, ensuring it's fully coated. Immediately roll in the shredded coconut until covered.
  9. Set aside on parchment paper to allow the coating to firm up slightly before serving.

Tips:

  • Don't over-mix the cake batter to ensure a tender crumb.
  • Adjust air frying time based on the size of your cake pieces and your specific air fryer model. Keep an eye on them to prevent over-browning.
  • For an even more vibrant "Sno-Ball" look, you can add a tiny drop of pink food colouring to the marshmallow mixture before coating.
  • If the marshmallow mixture starts to firm up while coating, gently reheat it for a few seconds in the microwave.
