Method & Instructions

Step 1: Make the Cookie Dough (Prepare ahead)

  1. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  2. Beat in the egg and vanilla extract until well combined.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined and a soft dough forms. Do not over-mix.
  5. Divide the dough in half, flatten each half into a disc, wrap tightly in plastic wrap, and refrigerate for at least 1 hour (or up to 2 days). This is crucial for easy rolling.


Step 2: Bake the Cookies

  1. Preheat your oven to 180 degreeC (350 degree F). Line baking sheets with parchment paper.
  2. On a lightly floured surface, roll out one disc of chilled dough to about 1/4 inch thickness.

Step 3: Make the Sweet & Sour Royal Icing

  1. In a large bowl, combine the sifted confectioners' sugar and meringue powder.
  2. Gradually add the warm water (1/4 cup at a time) and beat on low speed with an electric mixer until combined.
  3. Increase speed to high and beat for 5-7 minutes until the icing is thick, glossy, and holds stiff peaks.
  4. Stir in the white rice vinegar and preserved plum powder. Taste and adjust the amount of plum powder and vinegar to your preference for a balanced sweet and sour flavour.
  5. If desired, add a few drops of red gel food colouring for a festive look and mix until evenly coloured.
  6. If the icing is too thick for flooding, add water a teaspoon at a time until desired consistency is reached.


Step 4: Decorate the Cookies

  1. Once the cookies are completely cool, transfer the royal icing to piping bags fitted with small round tips.
  2. Outline each cookie with a stiffer consistency icing, then flood the centre with a slightly thinner consistency icing (you may need to thin a portion of the icing with a few drops of water).
  3. Allow the icing to dry completely (this can take several hours or overnight).1
