Duckweed Pesto Pasta

Ingredients

  • 2 cups chickpea or lentil pasta
  • 2 tbsp duckweed powder (or 1 cup fresh, rinsed)
  • 1 cup fresh basil leaves
  • 1/3 cup walnuts (rich in Omega-3)
  • 2 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • 2 garlic cloves
  • Pinch of sea salt

Instructions

  1. Cook the Pasta: Boil the legume-based pasta until al dente. Reserve 1/4 cup of the cooking water, then drain.
  2. Make the Pesto: In a food processor, pulse the duckweed, basil, walnuts, and garlic. Slowly drizzle in the olive oil and lemon juice until smooth.
  3. Toss: Combine the pesto with the warm pasta. Add the reserved pasta water a spoonful at a time to create a silky sauce.

  • Choose Legume Pasta: Swapping white pasta for chickpea or lentil varieties adds fibre and protein, which prevents sharp blood sugar spikes.2
  • Add "Volume" Veggies: Toss in sautéed spinach or zucchini ribbons to increase fibre without adding many calories.
  • Watch the Sodium: Use lemon juice and garlic for flavour instead of excess salt to keep blood pressure in check.
