Roasted Strawberry Skewers with Balsamic Glaze

Ingredients:

  • 1 lb Large, fresh strawberries (hulls removed)
  • 2 tbsp Aged balsamic vinegar (or balsamic glaze with no added sugar)
  • 1 tsp Extra virgin olive oil
  • 1 tsp Fresh thyme or finely chopped basil
  • Pinch Black pepper
  • Bamboo skewers (soaked in water for 20 minutes)


Method

  1. Marinate: In a bowl, whisk together the balsamic vinegar, olive oil, and black pepper. Add the strawberries and toss gently to coat.
  2. Thread: Carefully thread 3–4 strawberries onto each bamboo skewer.
  3. Roast: Preheat oven to 400 degree F (200 degree C). Place skewers on a parchment-lined baking sheet. Roast for 8–10 minutes until the berries are soft and just beginning to release their juices.
  4. Glaze: Drizzle any remaining marinade from the bowl over the hot skewers.
  5. Serve: Sprinkle with fresh herbs and serve warm or at room temperature.
