Basil Seed & Lychee Panna Cotta

This Basil Seed & Lychee Panna Cotta is a refreshing, spa-like dessert that balances Italian silkiness with tropical flair. By utilising basil seeds (sabja), we introduce a unique, jelly-like texture similar to chia but with a lighter profile. These seeds are celebrated in Southeast Asia for their cooling properties and high fibre content. The delicate, floral sweetness of lychee provides the primary flavour, allowing us to significantly reduce added sugars. It is a light, elegant, and hydrating treat that serves as a perfect palate cleanser after a spicy meal, proving that indulgence can be both functional and refined.


Ingredients

  • 1 cup Coconut milk (or light cream)
  • 1/2 cup Lychee juice (unsweetened)
  • 1/2 cup Fresh or canned lychees, chopped (save some for garnish)
  • 2 tsp Gelatine powder (or agar-agar for a vegan version)
  • 1 tbsp Basil seeds
  • 1 tbsp Honey or monk fruit sweetener
  • 1 tsp Rose water (optional, for floral depth)

Instructions

  1. Hydrate Seeds: Soak basil seeds in 1/4 cup water for 15 minutes until they swell and form a translucent coating. Drain any excess water.
  2. Bloom Gelatine: Sprinkle gelatine over 2 tbsp of the lychee juice and let it sit for 5 minutes.
  3. Heat: In a saucepan, combine coconut milk, the remaining lychee juice, and sweetener. Heat over medium until simmering (do not boil).
  4. Dissolve: Remove from heat and stir in the bloomed gelatine until completely dissolved. Add the rose water and chopped lychees.
  5. Set: Gently fold in the hydrated basil seeds. Pour the mixture into ramekins or glass jars.
  6. Chill: Refrigerate for at least 4 hours or overnight until firm. Top with a whole lychee before serving.


Tips for Success

  • Prevent Clumping: Stir the basil seeds thoroughly into the liquid just before the panna cotta begins to set in the fridge to ensure they are evenly distributed rather than sinking to the bottom.
  • Diabetes-Friendly Note: Basil seeds are excellent for blood sugar management; their high fibre content slows down the digestion of carbohydrates and prevents glucose spikes.
  • Tropical Twist: For an extra layer of flavour, add a squeeze of fresh lime juice to the mixture to brighten the floral notes of the lychee.
