A Berner Platte is a legendary, meat-heavy feast from Bern, Switzerland, traditionally loaded with pork, sausages, and sauerkraut. This creative twist introduces an umami-rich, futuristic culinary element—marrying rich European comfort food with Japanese fermentation techniques for a uniquely modern fusion profile.

Ingredients

  • 1 lb mixed high-quality meats (smoked pork loin, bacon, and traditional Swiss sausages like Bernese tongue sausage), sliced
  • 2 tbsp white or red miso paste
  • 1 tbsp mirin
  • 1 tbsp low-sodium soy sauce or tamari
  • 1 tsp fresh ginger, grated
  • 2 cups sauerkraut, drained and rinsed
  • 1 cup small gold potatoes, boiled and halved

Method & Instructions


1.Whisk the Glaze:5 mins.

In a small bowl, whisk together the miso paste, mirin, low-sodium soy sauce, and grated ginger with a tablespoon of warm water until smooth.

2.Warm the Base:10 mins.

In a large skillet, spread the sauerkraut and halved boiled potatoes. Pour a quarter-cup of water or low-sodium vegetable broth over them, cover, and let simmer over medium-low heat until thoroughly warmed.

3.Sear and Glaze the Meats:8 mins.

In a separate non-stick skillet over medium-high heat, sear the smoked pork loin, bacon, and sausages for 2 to 3 minutes per side until lightly browned. Reduce heat to low, brush the miso glaze generously over all the meats, and toss for 1 minute until sticky and caramelised.

4.Assemble the Feast:2 mins.

Arrange the warm sauerkraut and potatoes as a bed on a large serving platter. Layer the beautifully glazed, umami-rich meats right on top.
