- 200g Silken tofu, well-drained
- 250g Mascarpone cheese
- 100g Powdered sugar
- 1 tsp Almond extract
- 150g Ladyfingers (Savoiardi)
- 200ml Strong brewed coffee (chilled)
- 2 tbsp Shaoxing rice wine (or sweet rice wine)
- 2 tbsp Cocoa powder (for dusting)
- 1/4 cup Toasted almond slivers (for garnish)
Instructions
- Prepare the Almond Tofu Cream: In a food processor, blend the drained silken tofu until completely smooth. In a separate large bowl, whip the mascarpone, powdered sugar, and almond extract until creamy. Gently fold the smooth tofu into the mascarpone mixture until uniform and airy.
- Create the Soak: Combine the chilled coffee and rice wine in a shallow bowl.
- Assemble: Briefly dip each ladyfinger into the coffee-wine mixture (do not soak too long or they will become mushy). Arrange a single layer of ladyfingers in the bottom of a serving dish.
- Layer: Spread half of the almond tofu cream over the ladyfingers. Repeat with a second layer of dipped ladyfingers and the remaining cream.
- Chill and Serve: Refrigerate for at least 4 hours (preferably overnight) to set. Before serving, dust generously with cocoa powder and top with toasted almond slivers.
