This innovative creation marries the buttery, flaky perfection of traditional Hungarian Kifli rolls with the robust, savoury heart of a Kyrgyz Samsa. Encased within delicate, golden layers of enriched dough lies a spiced filling of finely minced lamb, sweet onions, and toasted cumin. Ingredients

The Enriched Kifli Dough

  • 400g All-purpose flour
  • 200g Cold unsalted butter, cubed
  • 150ml Cold sour cream or Greek yogurt
  • 1 tsp Granulated sugar
  • 1 tsp Sea salt
  • 1 Egg yolk (for egg wash)

Kyrgyz Samsa Filling

  • 350g Finely minced lamb (or hand-chopped lamb shoulder)
  • 2 large Yellow onions, finely diced
  • 1.5 tsp Whole cumin seeds, lightly toasted and crushed
  • 1 tsp Freshly cracked black pepper
  • 1 tsp Sea salt
  • 2 tbsp Melted lamb fat or butter
  • 1 tbsp Sesame seeds (for topping)

Instructions & Method

1. Prepare the Pastry Dough: In a large mixing bowl, combine the flour and salt. Cut in the cold cubed butter using a pastry cutter or your fingers until pea-sized crumbs form. Stir in the cold sour cream just until the dough comes together. Wrap in plastic and chill in the refrigerator for at least 1 hour.

2. Mix the Samsa Filling: In a medium bowl, combine the finely minced lamb, finely diced onions, toasted crushed cumin seeds, black pepper, salt, and melted lamb fat. Mix thoroughly with your hands to distribute the flavours evenly. Keep refrigerated until ready to assemble.

3. Roll and Cut: Divide the chilled dough into two equal portions. Roll each portion out on a lightly floured surface into a large circle roughly 3mm thick. Cut each circle into 8 equal triangles, like a pizza.

4. Shape the Kifli: Place a small spoonful (approx. 1 tbsp) of the raw lamb filling at the wide base of each dough triangle. Fold the corners inward slightly, then roll firmly upward toward the tip to form the classic crescent shape. Curve the ends slightly.

5. Arrange and Glaze: Place the shaped rolls on a parchment-lined baking sheet seam-side down. Brush the tops generously with the beaten egg yolk and sprinkle evenly with sesame seeds and a pinch of extra cumin seeds.

6. Bake to Golden Perfection: Preheat your oven to 200°C (400°F). Bake the rolls for 22–25 minutes until the pastry is deeply golden, crisp, and flaky, and the lamb filling is fully cooked through.

7. Serve: Let cool for 5 minutes on a wire rack before serving warm alongside a bowl of fresh yogurt-herb dipping sauce or tangy tomato gazpacho.
