Banana Leaf-Wrapped Pamonha is a beautiful fusion of Brazilian soul and South Pacific technique. By blending the traditional Brazilian pamonha—a creamy, hearty paste made from grated fresh corn—with the subtle, warming zest of fresh ginger, this version offers a nuanced brightness that cuts through the natural sweetness of the corn. When wrapped securely in banana leaves and steamed using the Fijian method, the corn paste locks in a delicate, earthy aroma imparted by the leaf, resulting in a texture that is simultaneously soft, slightly firm, and incredibly comforting. Each parcel unrolls to reveal a golden, fragrant treat with a silky mouthfeel and a gentle heat from the ginger, making it a perfect cross-cultural snack that is both deeply familiar and uniquely revitalising.



Ingredients

  • Corn: 6 cups fresh corn kernels (cut from about 6–8 cobs of sweet corn)
  • Coconut: ½ cup thick coconut milk or coconut cream
  • Ginger: 1 tablespoon freshly grated ginger
  • Sugar/Salt: 2 tablespoons sugar (adjust for sweetness) and 1 teaspoon salt
  • Oil: 2 tablespoons melted butter or coconut oil
  • Wrappers: Fresh banana leaves, cleaned, softened over a flame, and cut into 8x10 inch rectangles
  • Ties: Kitchen twine or thin strips of banana leaf


Instructions & Method

  1. Prepare the Corn Paste: In a blender or food processor, pulse the fresh corn kernels until you achieve a coarse, thick purée. Do not over-process; you want a slightly rustic texture.
  2. Flavour the Mixture: In a large bowl, combine the corn purée, coconut milk, grated ginger, sugar, salt, and melted butter. Mix until well combined into a thick, uniform paste.
  3. Prepare the Wraps: Soften your banana leaf rectangles by passing them quickly over a low flame or dipping them in boiling water; this makes them pliable and prevents tearing.
  4. Assemble: Place about ½ cup of the corn mixture in the centre of a leaf. Fold the sides of the leaf inward, then roll it tightly to form a cylindrical parcel. Secure the ends firmly with kitchen twine or banana leaf strips.
  5. Steam: Arrange the parcels in a steamer basket. Steam over boiling water for 45–50 minutes, ensuring the water level is maintained throughout.
  6. Serve: Carefully remove from the steamer and let them rest for 10 minutes. Serve warm, either unwrapped or directly in the leaf.


Pro Tips

  • The "Corn Milk": If your corn is very juicy, strain some of the liquid before adding the other ingredients to ensure your pamonha isn't too runny to hold its shape.
  • Leaf Prep: If your banana leaves are brittle, steaming them for 1–2 minutes before wrapping makes them significantly easier to fold without cracking.
  • Ginger Infusion: If you want an even stronger ginger punch, steep the grated ginger in the coconut milk for 10 minutes before adding it to the corn mixture.
  • Checking Readiness: The pamonha is done when it is firm to the touch and the corn paste has turned a deep, opaque yellow.
