Fusion Recipe: Baobab and Lavender Crème Pâtissière

Ingredients
- 1 1/2 cups whole milk
- 1 tsp dried culinary lavender buds
Custard Base:
- 4 large egg yolks
- 1/3 cup granulated sugar
- 2 1/2 tbsp cornstarch
- 2 tbsp baobab fruit powder
- 2 tbsp unsalted butter, softened
- 1/2 tsp vanilla extract
- Pinch of fine salt
Instructions
- Infuse Milk: In a small saucepan, heat whole milk until it just begins to simmer. Add dried lavender buds, remove from heat, cover, and let steep for 10–12 minutes. Strain out the lavender.
- Whisk Base: In a medium bowl, whisk egg yolks and sugar together until pale and slightly thickened. Whisk in cornstarch, baobab powder, and a pinch of salt until smooth.
- Temper & Cook: Slowly pour the warm lavender milk into the egg mixture while whisking constantly. Return the mixture to the saucepan over medium-low heat. Cook, whisking continuously, until the pastry cream thickens and boils.
- Finish & Chill: Remove from heat and whisk in the butter and vanilla extract until glossy. Press plastic wrap directly onto the surface of the cream and chill in the refrigerator for at least 2 hours before using.
