Chäsplättli Dessert Sushi is a playful, sophisticated confection that ingeniously bridges traditional Swiss alpine dairy culture with modern Japanese culinary presentation. Inspired by the rustic Swiss tradition of the Chäsplättli (cheese platter), this dessert reinvents sweet treats by using vibrant, chewy fruit leather as a nori wrapper instead of seaweed. Inside, a velvety, sweetened cream cheese filling mimics rich artisan cheese, while the dish is served with a clever fruit compote acting as a spicy-sweet, colourful "wasabi" paste alongside a ginger-infused syrup. It is a stunning, creative conversation piece that balances creamy textures with bright, fruity tartness in every single bite.


Ingredients

  • Fruit Leather Sheets (e.g., Raspberry or Mango): 3–4 large pliable sheets
  • Cream Cheese: 1 cup (226g), softened to room temperature
  • Mascarpone Cheese: 1/2 cup, for extra rich, creamy depth
  • Powdered Sugar (Icing Sugar): 1/3 cup
  • Vanilla Bean Paste: 1 teaspoon
  • For the "Wasabi" Fruit Compote: 1 cup fresh kiwifruit or green apple, finely minced; 1 tablespoon honey or agave syrup; a tiny pinch of matcha powder (for the authentic green colour); and a drop of ginger extract for a subtle spicy kick
  • Fresh Mint Leaves: For garnish

Instructions & Method


Step 1: Prepare the Sweet Cheese Filling

  1. In a medium mixing bowl, beat the softened cream cheese, mascarpone cheese, powdered sugar, and vanilla bean paste together until completely smooth, light, and fluffy.
  2. Transfer the mixture to a piping bag or a ziplock bag with the corner snipped off for easy application.

Step 2: Roll the Dessert Sushi

  1. Lay a sheet of pliable fruit leather flat on a clean cutting board or sushi mat.
  2. Pipe a uniform line of the sweet cheese filling across the lower third of the fruit leather sheet.
  3. Carefully lift the edge of the fruit leather and roll it tightly around the filling into a neat cylinder, pressing lightly to seal. Repeat with remaining sheets.

Step 3: Slice and Plate

  1. Using a sharp knife wiped with a damp cloth, slice each fruit leather cylinder cleanly into bite-sized sushi rounds.
  2. Arrange the pieces aesthetically on a dark slate or dessert plate to mimic a traditional sushi presentation.

Step 4: Make the Compote "Wasabi" and Serve

  1. In a small bowl, mix the finely minced green fruit (kiwifruit or apple) with honey, matcha powder, and ginger extract until it forms a thick, textured paste resembling wasabi.
  2. Spoon small dollops of the fruit compote "wasabi" next to the sushi rolls, garnish with fresh mint leaves, and serve chilled.
