Fusion Recipe: Galinha Cabidela Sour Cream Soup
Galinha Cabidela Sour Cream Soup is a daring and intensely flavourful cross-cultural creation that marries the rustic Portuguese-Macanese tradition of blood-enriched poultry (Galinha Cabidela) with the hearty, comforting warmth of Central European dairy. In this unique style, chicken is simmered in a dark, earthy broth enriched with vinegar and fresh blood, then softened with rich Hungarian sour cream (tejföl) to balance the tang. Finished with hand-pinched Hungarian Csipetke noodles, it is a profoundly rich, velvety, and deeply warming soup with a complex flavour profile.

For the Soup Base
- 1 whole chicken (approx. 3–4 lbs), cut into serving pieces
- 1/2 cup fresh poultry blood (stabilised with 1 tbsp vinegar to prevent coagulation)
- 1/4 cup apple cider vinegar or red wine vinegar
- 2 tbsp lard or vegetable oil
- 2 large onions, finely chopped
- 3 cloves garlic, minced
- 1 tbsp sweet Hungarian paprika
- 1 large carrot & 1 parsnip, diced
- 4 cups chicken stock or water
- Bay leaf, salt, and freshly ground black pepper
For the Creaminess & Finishing
- 1 cup Hungarian sour cream (tejföl) (or full-fat sour cream)
- 1 tbsp all-purpose flour (to stabilise the sour cream)
For the Hungarian Csipetke (Pinched Noodles)
- 1 large egg
- 1/4 tsp salt
- 1/2 to 3/4 cup all-purpose flour (as needed to form a stiff dough)
📝 Instructions & Method
1. Make the Csipetke Noodles
- Mix dough: In a small bowl, combine the egg, salt, and enough flour to form a very stiff, smooth dough (do not add water).
- Pinch: Rest the dough for 10 minutes. Pull off tiny pea-sized pieces of dough and pinch them between your thumb and index finger, placing them on a floured surface. Set aside.
2. Brown the Chicken and Build the Base
- Sauté aromatics: Heat the lard in a large heavy-bottomed pot or Dutch oven over medium heat. Add the chopped onions and sauté until translucent and lightly golden. Stir in the minced garlic and sweet Hungarian paprika, cooking for 30 seconds until fragrant.
- Brown chicken: Add the chicken pieces to the pot, turning them to coat in the spiced onion base. Add the diced carrots, parsnip, and bay leaf.
3. Simmer and Enrich with Blood
- Add stock: Pour in the chicken stock and vinegar. Bring to a boil, then reduce heat, cover, and simmer for about 30 minutes until the chicken is tender.
- Incorporate blood: In a small bowl, whisk the fresh blood together with a ladleful of warm broth from the pot to temper it. Slowly pour the blood mixture into the simmering soup while stirring constantly to create a smooth, dark, savoury broth without curdling. Simmer for another 10 minutes.
4. Add the Noodles & Sour Cream
- Cook noodles: Drop the prepared csipetke noodles directly into the simmering soup. Cook for 4 to 5 minutes until they float and are tender.
- Thicken with sour cream: In a bowl, whisk the sour cream and flour together until smooth. Temper the sour cream mixture by stirring in a couple of spoonfuls of hot soup broth. Lower the heat and stir the sour cream mixture into the pot. Heat through gently for 2–3 minutes, but do not let it boil vigorously. Season with salt and black pepper to taste.
5. Serve
- Ladle the rich, dark, and creamy soup hot into bowls, ensuring everyone gets a generous portion of tender chicken and pinched noodles.
