Garlic-Ginger Boiled Potatoes

This vibrant side dish takes humble boiled potatoes and elevates them into a fragrant, buttery showstopper. Small, tender new potatoes are boiled until creamy on the inside, then tossed directly into a glossy, sizzling emulsion of warm butter, freshly grated ginger, and crushed garlic. The sharpness of the raw aromatics mellows slightly in the pan, creating a fragrant coating that clings to every crevice of the delicate potato skins. A splash of lemon juice and a shower of fresh herbs bring bright acidity and contrast to the rich, savoury base. Simple to prepare yet deeply aromatic, these potatoes deliver an intoxicating burst of garlic punch and ginger warmth in every bite—making them the perfect accompaniment to roasted meats, grilled fish, or vegetarian mains.


Ingredients


Potatoes & Emulsion:

  • 1.5 lbs (700g) small baby or new potatoes, washed
  • 3 tbsp unsalted butter
  • 1 tbsp olive oil
  • 4 cloves garlic, finely minced or grated
  • 1 tbsp fresh ginger, finely grated
  • 1 tbsp lemon juice
  • 1/4 cup fresh cilantro or parsley, finely chopped
  • Sea salt and freshly ground black pepper, to taste

Instructions

  1. Boil Potatoes: Place whole baby potatoes in a pot of heavily salted cold water. Bring to a boil over medium-high heat and cook for 12–15 minutes until fork-tender. Drain well and lightly crush a few to expose the insides.
  2. Make Emulsion: In a wide skillet over medium-low heat, melt butter with olive oil. Add the minced garlic and grated ginger, cooking for 1 to 2 minutes until fragrant and softened, taking care not to brown the garlic.
  3. Toss & Coat: Add the drained potatoes directly to the skillet. Toss continuously for 2–3 minutes over medium heat until the potatoes are thoroughly coated in the glossy ginger-garlic butter sauce.
  4. Finish: Remove from heat, stir in lemon juice, season generously with salt and pepper, and garnish with fresh chopped cilantro or parsley before serving warm.

Chef Tips

  • Lightly Crush: Gently press down on each potato with the back of a spoon to create small cracks; this allows the rich ginger-garlic butter to soak into the creamy centre.
  • Low and Slow: Cook the garlic and ginger gently on low heat so they release their flavourful oils into the butter without burning or becoming bitter.
