Ginataang Mussels with Bush Pepper is a vibrant cross-cultural fusion dish that marries the comforting Filipino classic of seafood cooked in rich coconut milk (ginataan) with the unique, earthy kick of native Australian bush pepper. Ingredients

  • Mussels: 2 lbs fresh blue mussels, cleaned and debearded
  • Coconut Milk: 1 can (13.5 oz) full-fat coconut milk (or coconut cream for a richer sauce)
  • Bush Pepper: 1 to 1.5 teaspoons ground native Australian bush pepper (or substitute with freshly cracked Tasmanian pepper-berry/black pepper blend)
  • Aromatics: 3 cloves garlic (minced), 1 medium onion (sliced), and 1-inch piece of ginger (julienned)
  • Chilli: 2 red finger chilies or bird's eye chilies (sliced)
  • Oil: 1 tablespoon cooking oil
  • Seasoning: 1 tablespoon fish sauce (patis) or soy sauce to taste
  • Garnish: Fresh cilantro or sliced green onions


Instructions & Method

  1. Prep the Aromatics: Heat the cooking oil in a large skillet or wide pot over medium heat. SautΓ© the minced garlic, sliced onion, and julienned ginger until softened and fragrant (about 2–3 minutes).
  2. Simmer the Coconut Base: Pour in the coconut milk and bring it to a gentle simmer. Let it cook for about 3 to 5 minutes, allowing it to reduce slightly and thicken.
  3. Add Flavour & Spice: Stir in the ground Australian bush pepper, sliced chilies, and fish sauce. Let the spices infuse into the creamy coconut sauce for a couple of minutes.
  4. Cook the Mussels: Add the cleaned mussels to the skillet and toss them gently in the sauce. Cover the pot with a lid and let them steam in the coconut mixture for 4 to 6 minutes, or until all the shells pop open.
  5. Serve: Discard any mussels that remain closed. Garnish with fresh cilantro or green onions, and serve hot straight from the pan with plenty of steamed rice.
