Hout (Fish) Mačboos with Kajgana

Hout Machboos with Kajgana brings together the fragrant, spiced seafood traditions of the Arabian Gulf with the rich, herbal breakfast culture of the Balkans. Gulf-style Machboos (Hout) features flaky white fish layered with warm Bezar spices, aromatic basmati rice, and black lime. Serving it alongside Balkan Kajgana—creamy, soft-scrambled eggs folded with salty feta and fresh dill—creates a unique contrast between warm, earthy rice and cooling, tangy herbaceous eggs.


Ingredients


Yields: 4 servings


For the Fish (Hout) & Spiced Rice


  • 1.5 lbs (700g) firm white fish fillets (e.g., sea bass, cod, or kingfish), cut into large portions
  • 2 cups aged Basmati rice, rinsed and soaked for 30 minutes
  • 1 large yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp grated fresh ginger
  • 1.5 tbsp Gulf Bezar spice blend (or equal parts cumin, coriander, turmeric, cinnamon, and cardamon)
  • 1 dried black lime (loomi), pierced
  • 3 cups fish or vegetable stock
  • 3 tbsp ghee or vegetable oil
  • Salt to taste


For the Kajgana (Feta & Dill Scrambled Eggs)


  • 6 large eggs
  • 1/2 cup (100g) Balkan or Greek feta cheese, crumbled
  • 3 tbsp fresh dill, finely chopped
  • 2 tbsp unsalted butter
  • Freshly cracked black pepper and a pinch of salt


Instructions & Method


  1. Season and Sear Fish: Pat fish fillets dry. Season generously with 1 teaspoon of the Bezar spice blend and salt. Heat 2 tablespoons of ghee in a deep pot or Dutch oven over medium-high heat. Sear fish for 2–3 minutes per side until lightly golden. Remove fish carefully and set aside.
  2. Build the Aromatic Base: Add remaining ghee to the same pot. Sauté chopped onions until golden-brown (about 8 minutes). Stir in garlic, ginger, remaining Bezar spice, and dried lime; cook for 1 minute until fragrant.
  3. Cook the Machboos Rice: Stir in soaked, drained Basmati rice to coat in spiced ghee. Pour in stock, bring to a boil, then reduce heat to low. Arrange seared fish fillets on top of the rice, cover tightly with a lid, and simmer undisturbed for 18–20 minutes until rice is fluffy and fish cooks through.
  4. Prepare the Kajgana: While rice rests, beat eggs with a pinch of salt and black pepper. Melt butter in a non-stick skillet over low heat. Add eggs and cook slowly, stirring gently with a spatula to form soft curds. Just before eggs are set, fold in crumbled feta and fresh chopped dill. Remove from heat immediately.
  5. Serve: Fluff Machboos rice onto a platter, top with fish fillets, and serve warm with a side of soft, herbaceous Kajgana.


Pro Tips


  • Keep Eggs Creamy: Cook Kajgana over low heat and remove from stove while slightly wet; residual heat finishes cooking the eggs without drying out the feta.
  • Firm Fish Matters: Use thick, firm white fish fillets like cod, sea bass, or grouper so the meat holds together when rested on top of steaming rice.
  • Bezar Substitute: If pre-made Gulf Bezar spice isn't available, make a quick blend using equal parts ground cumin, coriander, turmeric, sweet paprika, and a pinch of ground cardamom and cinnamon.
