A vibrant fusion of classic Indian street food and tropical freshness, this dish reinvents traditional pani puri by replacing the standard potato filling with a bright, zesty salsa of sweet-tart green kiwifruit, crisp red onion, and fragrant fresh coriander. Paired with a chilled, spiced tamarind-mint water (pani), it delivers an unforgettable explosion of crisp, sweet, spicy, and tangy flavours in every single bite.
Ingredients
For the Pani (Mint-Tamarind Water)
- Fresh Mint Leaves: 1 cup, packed
- Fresh Coriander Leaves: 1/2 cup
- Green Chillies: 1–2 (adjust to taste)
- Ginger: 1-inch piece
- Tamarind Paste: 2 tablespoons
- Roasted Cumin Powder: 1 teaspoon
- Black Salt (Kala Namak): 1 teaspoon
- Chaat Masala: 1 teaspoon
- Cold Water: 3 cups
- Ice Cubes: A handful
For the Filling & Salsa
- Pani Puri Shells (Puri): 20–25, crispy and hollow
- Green Kiwifruits: 2 firm-ripe, peeled and finely diced
- Red Onion: 1 small, finely chopped
- Fresh Coriander: 2 tablespoons, finely chopped
- Boiled Potatoes: 1 cup, peeled and cubed small (optional, for a traditional base)
- Chaat Masala: 1 teaspoon
- Lemon Juice: 1 tablespoon
- Salt: To taste
Instructions & Method
Step 1: Prepare the Spiced Pani (Water)
- In a blender, combine the mint leaves, coriander leaves, green chillies, and ginger with a splash of cold water. Blend into a smooth, vibrant green paste.
- Transfer the paste to a large bowl or pitcher. Stir in the 3 cups of cold water, tamarind paste, roasted cumin powder, black salt, and chaat masala.
- Mix thoroughly until the tamarind and spices dissolve completely. Taste and adjust seasoning if needed.
- Drop in a handful of ice cubes to keep it refreshingly cold, and set aside in the refrigerator.
Step 2: Make the Kiwifruit & Coriander Salsa
- In a medium mixing bowl, combine the finely diced kiwifruit, chopped red onion, and fresh coriander.
- If using the optional boiled potatoes, add them in for extra texture.
- Gently toss the mixture with lemon juice, chaat masala, and a pinch of salt. Keep it fresh and chilled until ready to assemble.
Step 3: Assemble and Serve
- Arrange the crisp pani puri shells on a serving platter.
- Gently crack open a small hole on the top of each shell using your thumb.
- Spoon a small amount of the kiwifruit and coriander salsa (and potato, if using) into each hollow shell.
- Just before eating, ladle the chilled, spiced tamarind-mint pani into each shell until nearly full, and pop the entire puri into your mouth immediately to enjoy the crunch and burst of flavours.

- Choose Firm Kiwifruits: Ensure your kiwifruits are ripe yet firm so they hold their shape and provide a pleasant tart crunch rather than turning mushy in the salsa.
- Assemble Immediately: Because of the juicy nature of kiwifruit, fill and serve the puri right away to prevent the crispy shells from getting soggy.
- Control the Heat: Adjust the green chillies in the pani depending on how much spice you prefer to balance the sweetness of the fruit.
