Macanese Pork Chop Bun Lángos is an ultimate cross-cultural street food mashup that takes the beloved Hungarian deep-fried flatbread (lángos) and repurposes it as the crusty, pillowy bun for a classic Macanese pork chop sandwich. Featuring a bone-in, soy-marinated fried pork chop nestled inside garlic-rubbed, golden-crisp lángos, this hearty creation combines Central European fried dough indulgence with the savoury, aromatic crunch of Macanese comfort food.


🥪 Ingredients


For the Lángos (Fried Flatbread Buns)

  • 2 cups all-purpose flour
  • 1 tsp active dry yeast
  • 1 tsp sugar
  • 1/2 cup warm milk
  • 1/4 cup warm water
  • 1 tsp salt
  • Oil or lard for deep frying
  • 1 clove garlic (halved, for rubbing the fried lángos)


For the Macanese Marinated Pork Chops

  • 2 bone-in pork chops (thinned slightly with a mallet; bone-in is traditional for Macanese pork chop buns)
  • 2 tbsp soy sauce
  • 1 tbsp Chinese Shaoxing wine
  • 1 tsp sesame oil
  • 2 cloves garlic, minced
  • 1/2 tsp five-spice powder
  • 1/4 tsp ground white pepper
  • Pinch of salt and sugar


For the Breaded Coating & Assembly

  • 1/2 cup all-purpose flour
  • 1 large egg, beaten
  • 1 cup panko breadcrumbs
  • A few crisp lettuce leaves and tomato slices (optional)

1. Make the Lángos Dough

  • Activate yeast: In a bowl, combine the warm milk, warm water, sugar, and yeast. Let sit for 5–10 minutes until frothy.
  • Knead: In a large bowl, mix the flour and salt. Pour in the yeast mixture and knead into a smooth, soft dough. Cover and let rise in a warm place for 1 hour until doubled in size.
  • Shape: Punch down the dough and divide it into 2 or 4 equal portions (depending on how large you want your burger buns). Stretch and flatten each piece into thick, small oval flatbreads.

2. Marinate and Bread the Pork Chops

  • Marinate: In a shallow dish, combine soy sauce, Shaoxing wine, sesame oil, minced garlic, five-spice powder, white pepper, salt, and sugar. Coat the pork chops thoroughly and let marinate for at least 30 minutes.
  • Bread: Dredge each marinated pork chop first in flour, dip into the beaten egg, and press firmly into the panko breadcrumbs to coat completely.

3. Fry the Pork Chops & Lángos

  • Fry chops: Heat about 1 inch of oil in a skillet over medium-high heat. Fry the pork chops for 4 to 5 minutes per side until golden brown, crispy, and cooked through. Transfer to a wire rack.
  • Fry lángos: In a deep pot or skillet, heat enough oil or lard for deep frying to 375°F (190°C). Drop the lángos dough pieces into the hot oil and fry for 2 to 3 minutes per side until puffed, golden, and crispy. Drain on paper towels.

4. Assemble the Lángos Sandwich

  • Prep bun: While the lángos are still hot, rub the cut surfaces lightly with the halved garlic clove. Slice each lángos horizontally (like a burger bun).
  • Build: Place a piece of crispy Macanese fried pork chop inside the lángos bun, adding a slice of tomato and lettuce if desired. Serve immediately while the lángos is crisp and the pork is hot.
