  • 1 tbsp fresh ginger, finely minced or grated
  • 1 tsp dark soy sauce
  • 1/2 tsp sesame oil

  • Toasted sesame seeds or a pinch of chilli flakes (for garnish)

1. Prepare the Túró

  • Break down curds: Place the Hungarian túró in a mixing bowl. If the curds are large or dry, use a fork or the back of a spoon to gently break them down to a smooth, spreadable texture while keeping some slight crumbly character.

2. Add the Aromatics

  • Incorporate mix-ins: Add the finely chopped scallions and grated fresh ginger directly into the cheese.
  • Season: Drizzle in the dark soy sauce and sesame oil. Season with a pinch of salt and white pepper, keeping in mind that the soy sauce adds sodium.

3. Bind and Cream

  • Cream: Stir in the sour cream or Greek yogurt tablespoon by tablespoon until the mixture reaches a rich, cohesive, and spreadable dip consistency.

4. Rest and Marinate

  • Chill: Transfer the mixture to a serving bowl, cover, and let it rest in the refrigerator for at least 30 minutes. This allows the ginger, scallion, and soy sauce to infuse deeply into the cottage cheese curds.
