Traditionally, madrouba relies on rice simmered down to a velvety, porridge-like consistency, which here forms a luxuriously creamy risotto base. Infused with a fragrant, spicy laksa broth reduction and folded together with tender shredded seafood, this dish bridges Gulf heritage and Peranakan flavours. It delivers a deeply comforting yet exotic culinary experience crowned with vibrant herbs and chilli oil.


Ingredients


For the Risotto Base (Madrouba Style)

  • Carnaroli or Arborio Rice: 1.5 cups (or broken short-grain rice)
  • Ghee or Butter: 3 tablespoons
  • Yellow Onion: 1 large, finely diced
  • Garlic: 4 cloves, minced
  • Fresh Ginger: 1 tablespoon, grated
  • Chicken or Fish Stock: 4 to 5 cups, kept warm

For the Laksa Reduction & Seafood

  • Laksa Paste: 3 tablespoons (authentic store-bought or homemade)
  • Coconut Milk: 1 cup, full-fat
  • Mixed Seafood: 300g (shrimp, firm white fish chunks, and calamari rings)
  • Lemongrass: 1 stalk, bruised
  • Fish Sauce: 1 tablespoon
  • Lime Juice: 1 tablespoon, freshly squeezed

For Garnish

  • Fresh Coriander & Laksa Leaves (Vietnamese Mint): Chopped
  • Crispy Shallots: 2 tablespoons
  • Chilli Oil: A drizzle for serving

Instructions & Method


Step 1: Build the Aromatic Madrouba Base

  1. Melt the ghee in a heavy-bottomed pan or Dutch oven over medium heat. Add the diced onion, garlic, and ginger, cooking until soft and translucent (about 5 minutes).
  2. Add the rice, stirring continuously for 2 minutes to lightly toast the grains and coat them in the aromatic fats.

Step 2: Simmer and Cook Like Risotto

  1. Begin adding the warm stock one ladle at a time, stirring frequently and allowing the liquid to absorb before adding more.
  2. As the rice softens and breaks down—resembling the classic creamy texture of a slow-cooked Qatari madrouba—continue the process for about 20 to 25 minutes until the grains are al dente yet meltingly creamy.

Step 3: Infuse the Laksa Reduction & Seafood

  1. In a separate saucepan, whisk together the laksa paste, coconut milk, and bruised lemongrass. Simmer gently for 5 minutes until reduced and deeply fragrant.
  2. Add the mixed seafood directly into the laksa reduction, poaching gently for 3 to 4 minutes until just cooked through. Remove the lemongrass stalk.
  3. Pour this rich laksa-seafood mixture directly into the creamy madrouba risotto base, stirring gently to combine.
  4. Season with fish sauce and lime juice to balance the richness.

Step 4: Plate and Serve

  1. Spoon the rich Madrouba Laksa Risotto into warm shallow bowls.
  2. Top generously with the poached seafood, fresh coriander, laksa leaves, crispy shallots, and a drizzle of chilli oil.

  • Embrace the Texture: Traditional madrouba is soft and broken down, so feel free to press some of the rice grains against the side of the pan with your spoon to achieve that signature velvety porridge consistency combined with risotto richness.
