Masala shortbread cookies offer a sophisticated, aromatic twist on a classic Scottish bakery staple by infusing rich, buttery, melt-in-your-mouth pastry with a warming blend of festive spices. Featuring the comforting warmth of nutmeg and allspice, complemented by the subtle, licorice-like depth of ground star anise, these spiced treats bridge European baking traditions with vibrant global flavours. Perfectly crumbly and decadent, they make an exceptional accompaniment to afternoon tea, chai, or coffee during cooler seasons.


Ingredients

  • Unsalted Butter: 1 cup (226g), softened to room temperature
  • Powdered Sugar (Icing Sugar): 2/3 cup (80g), for a delicate, tender crumb
  • All-Purpose Flour: 2 cups (250g)
  • Cornstarch: 2 tablespoons (adds extra melt-in-your-mouth tenderness)
  • Ground Nutmeg: 1/2 teaspoon
  • Ground Allspice: 1/2 teaspoon
  • Ground Star Anise: 1/4 teaspoon (freshly ground for best flavour)
  • Ground Cinnamon: 1/2 teaspoon
  • Salt: 1/2 teaspoon
  • Vanilla Extract: 1 teaspoon
  • Coarse Sugar: 2 tablespoons (optional, for rolling or sprinkling edges)

Instructions & Method


Step 1: Cream the Butter and Sugar

  1. In a large bowl or stand mixer fitted with the paddle attachment, beat the softened unsalted butter and powdered sugar together on medium speed for about 2 to 3 minutes until pale, smooth, and creamy.
  2. Mix in the vanilla extract until fully incorporated.

Step 2: Combine Dry Ingredients and Spices

  1. In a separate medium bowl, whisk together the all-purpose flour, cornstarch, salt, ground nutmeg, ground allspice, ground star anise, and ground cinnamon.
  2. Gradually add the dry spice-and-flour mixture into the butter mixture on low speed just until a soft dough forms. Do not over-mix.

Step 3: Shape and Chill the Dough

  1. Turn the dough out onto a sheet of parchment paper and shape it into a log (about 2 inches in diameter) or press it evenly into a disk.
  2. Wrap tightly in plastic wrap and chill in the refrigerator for at least 1 hour (or up to 2 days) to firm up so the cookies hold their shape while baking.

Step 4: Slice and Bake

  1. Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.
  2. If using a log, slice the chilled dough into 1/4-inch thick rounds. Alternatively, roll the dough out to 1/4-inch thickness and cut into festive shapes using cookie cutters.
  3. Place the cookies on the prepared baking sheet about 1 inch apart.
  4. Bake for 12 to 15 minutes, or until the edges are just barely golden brown. The tops should remain pale.
  5. Remove from the oven and let the cookies cool on the baking sheet for 10 minutes before transferring them to a wire rack to cool completely.
