Mutton Curry Torrfisk (dried fish)

This cross-cultural fusion bridges the rugged high-altitude traditions of the Himalayas with Scandinavia's ancient seafaring heritage. Rehydrated Norwegian tørrfisk (dried cod) absorbs the deeply fragrant, warming spices of a classic Tibetan mutton curry base—infused with ginger, garlic, earthy cumin, and golden turmeric. As the dried fish slowly simmers, its firm texture softens while drinking in the rich, savoury depth of caramelised onions and tomatoes, traditionally engineered to combat harsh alpine climates. The result is a uniquely comforting dish where ocean-salty depth meets the aromatic heat and rustic heartiness of Himalayan mountain cooking. Perfectly comforting and robust, it is best enjoyed hot alongside steamed basmati rice, Tibetan tingmo (steamed bread), or warm flatbreads to soak up every drop of the spiced gravy.


Ingredients


Fish Preparation:

  • 200g dried cod (tørrfisk), soaked in water for 24–48 hours (water changed twice daily) and cut into bite-sized chunks

Curry Base:

  • 2 tbsp mustard oil or ghee
  • 1 large red onion, finely chopped
  • 1 tbsp ginger-garlic paste
  • 2 medium tomatoes, pureed or finely chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground turmeric
  • 1/2 tsp chilli powder
  • 1 tsp Garam Masala (or Tibetan chheng-ngar spice mix)
  • 1 cup beef or vegetable stock
  • Fresh cilantro and sliced green chilies for garnish

Instructions

  1. Build Aromatics: Heat mustard oil or ghee in a heavy-bottomed pot over medium heat. Add finely chopped onions and cook until deep golden brown. Stir in ginger-garlic paste and sauté for 1 minute until fragrant.
  2. Develop Base: Add cumin, coriander, turmeric, and chilli powder. Cook the spices for 30 seconds, then stir in the pureed tomatoes. Cook until the oil separates from the masala base.
  3. Simmer Curry: Pour in the stock, bring to a simmer, and stir in the garam masala to establish a rich curry sauce.
  4. Stew Fish: Gently fold in the rehydrated cod chunks. Cover and simmer over low heat for 15–20 minutes until the fish is tender and thoroughly infused with the curry spices. Garnish with fresh cilantro and serve warm.

Chef Tips

  • Proper Desalting: Ensure the dried cod is thoroughly soaked and rehydrated beforehand so it cooks evenly and isn't overly salty.
  • Gently Fold: Avoid over-stirring once the fish is in the pot so the chunks remain intact without flaking prematurely into the sauce.
