Chewy, dark brown sugar tapioca pearls add an essential textural element, transforming a seasonal coffeehouse staple into a fun, indulgence-packed boba creation. Ingredients


Pumpkin Spice Syrup:


* 1/2 cup real pumpkin puree

* 1/2 cup brown sugar

* 1/2 cup water

* 1 tsp pumpkin pie spice (cinnamon, nutmeg, ginger, clove)

* 1 tsp vanilla extract


Tea Base & Assembly:


* 2 tbsp loose-leaf Assam or Black tea (or 2 tea bags)

* 1 cup boiling water

* 1/2 cup whole milk (or oat milk)

* 1/2 cup cooked brown sugar boba pearls

* Ice cubes (optional)

* Whipped cream for topping


Instructions


1. **Brew Tea:** Steep black tea in 1 cup of boiling water for 5–7 minutes for a strong, concentrated base. Strain out leaves and let cool slightly.

2. **Make Syrup:** Combine pumpkin puree, brown sugar, water, and pumpkin pie spice in a saucepan. Simmer over medium heat for 3–5 minutes until smooth. Stir in vanilla extract.

3. **Combine:** In a shaker or measuring cup, mix 2 tablespoons of the warm pumpkin syrup, 1/2 cup of milk, and the brewed tea until well blended.

4. **Assemble:** Place cooked boba pearls into the bottom of a glass. Fill with ice (if serving cold), pour the pumpkin spice milk tea over top, and finish with a swirl of whipped cream and a sprinkle of pumpkin pie spice.

* **Strain for Smoothness:** If using real pumpkin puree, pass the cooked syrup through a fine-mesh sieve to remove any fibrous pulp for a silky-smooth drink.
