Spicy Aloo Bhorta Croquettes are a brilliant culinary fusion, transforming the beloved Bengali comfort dish—aloo bhorta—into a crispy, golden-brown appetiser. These croquettes capture the essence of the original dish by mashing boiled potatoes with pungent raw mustard oil, toasted dried chilies, onions, and fresh cilantro, which are then shaped into firm bites, coated in airy Panko breadcrumbs, and deep-fried to perfection. The result is a delightful textural contrast: a shatteringly crisp exterior that gives way to a soft, savoury, and aromatic potato centre with the distinct, nose-tingling kick of mustard oil. Ingredients

  • Potatoes: 4 large russet potatoes, boiled, peeled, and mashed
  • Mustard Oil: 1 ½ to 2 tablespoons high-quality raw mustard oil
  • Chilies: 3–4 dried red chilies, toasted until dark and crushed
  • Onion: ½ small red onion, finely minced
  • Cilantro: ¼ cup fresh cilantro, finely chopped
  • Spices: ½ teaspoon roasted cumin powder and salt to taste
  • Breading:
    • ½ cup all-purpose flour
    • 1 large egg, beaten (with a splash of water)
    • 1 ½ cups Panko breadcrumbs
  • Frying: Vegetable oil for deep frying


Instructions & Method

  1. Prepare the Bhorta: In a large mixing bowl, combine the mashed potatoes, minced onion, chopped cilantro, roasted cumin powder, and salt. Use your hands to crumble the toasted dried chilies into the mix.
  2. Add the Mustard Oil: Drizzle the raw mustard oil over the potato mixture. Mix thoroughly until the aromatics are evenly distributed and the characteristic pungent aroma is present.
  3. Shape: Take about 2 tablespoons of the potato mixture and shape them into firm, oval, or cylindrical croquettes. Ensure they are compact so they don't break during frying.
  4. Bread: Set up a dredging station. Roll each croquette in flour, dip it into the beaten egg, and then coat it thoroughly with Panko breadcrumbs, pressing gently to adhere.
  5. Fry: Heat about 2 inches of vegetable oil in a deep pot to 350°F (175°C). Carefully lower the croquettes into the hot oil in batches. Fry for 3–4 minutes, turning occasionally, until they are deep golden brown and crispy.
  6. Serve: Remove with a slotted spoon and drain on paper towels. Serve hot.

  • Preventing Cracks: If your croquettes seem too soft, chill the shaped, breaded croquettes in the freezer for 15 minutes before frying; this helps them maintain their shape perfectly in the hot oil.
  • Panko Preference: Panko breadcrumbs are essential for that signature "shatter-crisp" exterior; regular breadcrumbs will result in a denser, less airy crust.
