Fusion Recipe: Tamarind and Chilli Buerre Blanc

Ingredients
Reduction Base:
- 1/4 cup dry white wine (e.g., Sauvignon Blanc)
- 2 tbsp white wine vinegar
- 2 tbsp finely minced shallots
- 1 tbsp tamarind concentrate (or smooth tamarind paste)
- 1/2 to 1 small dried Zimbabwean chilli (Piri Piri), crushed (or chilli flakes)
Sauce Assembly:
- 1 cup (2 sticks) unsalted cold butter, cut into 1/2-inch cubes
- 1 tbsp heavy cream (optional, for stabilisation)
- Kosher salt, to taste
Instructions
- Simmer Reduction: In a small, heavy-bottomed saucepan, combine white wine, white wine vinegar, minced shallots, tamarind concentrate, and crushed Zimbabwean chilli. Simmer over medium-low heat until the liquid reduces to about 1 to 2 tablespoons of syrupy consistency.
- Add Cream (Optional): Stir in the heavy cream and let it bubble for 30 seconds. (This helps prevent the butter sauce from separating/breaking).
- Mount Butter: Reduce heat to the lowest setting. Add 2 cubes of cold butter at a time, whisking constantly until fully incorporated and emulsified. Continue adding butter cube by cube, never allowing the sauce to boil.
- Strain & Season: Strain the sauce through a fine-mesh sieve into a warm bowl to remove the shallot and chilli solids, pressing gently. Season with kosher salt to taste and serve immediately while warm.
