Eat Well Recipe: Oven-Roasted Mediterranean Sea Bream with Citrus & Fennel
This elegant, heart-healthy dish features whole sea bream (or fillets) baked to perfection over a bed of aromatic fennel and sweet cherry tomatoes. Ingredients
- The Fish:
- 1 whole sea bream (approx. 1.2 to 1.5 lbs / 500–700g), scaled, gutted, and rinsed (or 2 large sea bream fillets)

- Sea salt and freshly cracked black pepper, to taste
- The Aromatic Bed:
- 1 medium fennel bulb, thinly sliced (fronds reserved for garnish)
- 1 cup cherry tomatoes, halved
- 3 cloves garlic, smashed and left whole
- ½ medium red onion, thinly sliced
- The Seasoning & Citrus:
- 1 tablespoon herbs de Provence (dried thyme, rosemary, oregano, savoury, and marjoram)
- 1 lemon, thinly sliced (half for stuffing the cavity, half for topping)
- 2 tablespoons fresh lemon juice
- 2 tablespoons dry white wine or low-sodium vegetable broth (optional)
Instructions & Method
- Preheat the Oven:
Preheat your oven to 400°F (200°C). Lightly oil a large baking dish or cast-iron skillet with a little extra-virgin olive oil. - Prepare the Fennel & Aromatics Base:
Scatter the sliced fennel, red onion, halved cherry tomatoes, and smashed garlic evenly across the bottom of the prepared baking dish. Drizzle with a teaspoon of olive oil, season lightly with salt and pepper, and toss gently. - Prep and Season the Sea Bream:
Pat the sea bream completely dry with paper towels (this ensures crisp skin). Score the thickest part of the fish flesh on both sides 2 to 3 times diagonally with a sharp knife. Rub the entire fish—inside and out—with extra-virgin olive oil, sea salt, black pepper, and the herbs de Provence, pressing the herbs gently into the skin and scored cuts. - Stuff and Assemble:
Stuff the cavity of the whole fish with a few slices of lemon and a sprig of reserved fennel fronds. Lay the fish directly on top of the bed of fennel and tomatoes in the baking dish. Arrange the remaining lemon slices around and over the fish, and pour the fresh lemon juice and white wine (or broth) into the bottom of the dish. - Bake:
Place the baking dish in the preheated oven and roast uncovered for 20 to 25 minutes (if using whole fish) or 15 to 18 minutes (if using fillets). The fish is done when the flesh is opaque, flakes easily with a fork, and reaches an internal temperature of 145°F (63°C), and the fennel is tender-crisp. - Rest and Serve:
Remove from the oven and let the fish rest for 3 to 5 minutes. Garnish with fresh fennel fronds and serve warm, spooning the roasted fennel, tomatoes, and pan juices over the top.
