Ingredients

For the Soup Base:


  • 2 tablespoons extra-virgin olive oil
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 stalk celery, diced
  • 1 medium carrot, diced
  • 1 teaspoon ground cumin
  • 1 ½ teaspoons sweet Spanish smoked paprika (pimentón dulce)
  • Pinch of red pepper flakes (optional, for a mild kick)
  • Two 15-ounce (425g) cans chickpeas (garbanzo beans), rinsed and drained (or 3 cups cooked chickpeas)
  • 4 cups low-sodium vegetable or chicken broth
  • 1 bay leaf

For the Greens & Finishing:


  • 1 bunch Swiss chard, stems removed and chopped, leaves roughly sliced
  • 1 tablespoon fresh lemon juice (or apple cider vinegar)
  • Sea salt and freshly cracked black pepper, to taste
  • Optional garnish: A drizzle of extra-virgin olive oil, toasted pumpkin seeds (pepitas) for crunch, or a dollop of plain Greek yogurt.

Instructions & Method

  1. Sauté the Aromatics:
    Heat the extra-virgin olive oil in a large Dutch oven or heavy-bottomed soup pot over medium heat. Add the diced onion, celery, and carrot. Sauté for 6 to 8 minutes, stirring occasionally, until the vegetables are softened and the onions are translucent.
  2. Bloom the Spices:
    Stir in the minced garlic, ground cumin, smoked paprika, and red pepper flakes. Cook for about 1 minute, stirring constantly, until the spices are deeply fragrant and coat the vegetables. Be careful not to let the garlic burn.
  3. Simmer the Chickpeas:
    Add the rinsed chickpeas, low-sodium broth, and bay leaf to the pot. Bring the mixture to a gentle boil, then reduce the heat to low, cover, and let it simmer for 15 minutes to allow the flavours to meld together.
  4. Cream Part of the Soup (Optional Texture Step):
    For a richer, velvety texture without adding cream, ladle out about 1 cup of the chickpea and broth mixture, blend it until smooth (or mash it thoroughly with a potato masher), and stir it back into the pot.
  5. Wilt the Chard:
    Add the sliced Swiss chard leaves and stems to the soup. Stir gently and let it simmer uncovered for 3 to 5 minutes, just until the chard is tender and bright green.
  6. Finish and Season:
    Remove the pot from the heat and discard the bay leaf. Stir in the fresh lemon juice to brighten the flavours. Taste the soup and season with sea salt and black pepper as needed.
  7. Serve:
    Ladle into warm bowls. Garnish with a drizzle of olive oil or a sprinkle of toasted pumpkin seeds for added texture and healthy fats.
