Infusing the sponge ladyfingers with fragrant Earl Grey tea and layering them with rich mascarpone and sweet, bouncy tapioca pearls creates a playful yet sophisticated treat that delights every texture lover.
Ingredients
- Ladyfinger biscuits (Savoiardi): 24 to 30 pieces
- Mascarpone cheese: 16 oz (room temperature)
- Heavy whipping cream: 1 cup (chilled)
- Granulated sugar: 1/3 cup
- Egg yolks: 4 large
- Vanilla extract: 1 teaspoon
- Strong brewed Earl Grey tea: 1.5 cups (cooled)
- Dark brown sugar or brown sugar syrup: 3 tablespoons (dissolved into the warm tea for sweetness)
- Tapioca pearls (Boba): 1/2 cup (quick-cooking or traditional black boba)
- For the dusting: 2 tablespoons unsweetened cocoa powder mixed with 1 teaspoon finely ground Earl Grey tea leaves (or milk tea powder)
Instructions & Method
Step 1: Prepare the Earl Grey Infusion
- Brew a strong batch of Earl Grey tea using double the usual tea bags for 1.5 cups of boiling water. Steep for 5 minutes to get a robust flavour.
- Stir in the brown sugar until completely dissolved, then set the mixture aside to cool down completely.
Step 2: Cook the Boba Pearls
- Boil a pot of water and add the tapioca pearls. Follow package instructions (usually boiling for 5 to 15 minutes) until they are thoroughly chewy and translucent.
- Strain the boba, rinse briefly in warm water, and toss them in a small splash of brown sugar syrup so they don't stick together. Set aside.
Step 3: Whip the Mascarpone Cream
- In a heatproof bowl set over a pot of simmering water (double boiler), whisk the egg yolks and granulated sugar constantly for 3 to 5 minutes until pale, thickened, and warm. Remove from heat and let cool.
- In a separate chilled bowl, whip the heavy whipping cream and vanilla extract until stiff peaks form.
- Gently fold the softened mascarpone cheese into the cooled egg yolk mixture until smooth, then gently fold in the whipped cream until light and airy.
Step 4: Assemble the Tiramisu
- Quickly dip each ladyfinger into the sweetened Earl Grey tea for just 1 to 2 seconds per side (do not oversaturate or they will get soggy). Arrange them in a single, even layer across the bottom of an 8x8-inch baking dish.
- Spread half of the mascarpone cream mixture evenly over the ladyfingers.
- Scatter half of the cooked boba pearls evenly across the cream layer.
- Repeat with a second layer of dipped ladyfingers, the remaining mascarpone cream, and the rest of the boba pearls.
Step 5: Chill and Dust
- Cover the dish and refrigerate for at least 4 hours (overnight is best) to let the flavours meld and the dessert set firmly.
- Just before serving, generously dust the top through a fine-mesh sieve with the cocoa-Earl Grey powder blend. Slice and serve chilled.

- Don't Soak the Ladyfingers Too Long: Earl Grey tea is much lighter than espresso. Give ladyfingers a very quick dip—just a flash on each side—so they absorb the tea flavour without disintegrating.
