For the Verrine Layers
- 8 large shrimp, peeled, deveined, and boiled/steamed until pink (cut in half lengthwise for garnish, diced for layering)
- 1 cup rice vermicelli noodles, cooked according to package instructions, rinsed in cold water, and drained
- 1 English cucumber, cut into tiny, fine dice
- 1 medium carrot, julienned or finely diced
- Fresh herbs, roughly chopped (a mix of mint, Thai basil, and cilantro)

For the Peanut-Hoisin Mousse
- 1/3 cup creamy peanut butter

- 1/4 cup heavy cream (or coconut cream), whipped to soft peaks to create the light, airy mousse texture
- 1–2 tbsp warm water (to thin out the paste if needed)

1. Whip the Peanut-Hoisin Mousse
- Mix the base: In a mixing bowl, whisk together the peanut butter, hoisin sauce, lime juice, and chilli paste until smooth.
- Fold in cream: Gently fold the softly whipped heavy cream (or coconut cream) into the peanut mixture until light, airy, and mousse-like. Transfer to a piping bag or a ziplock bag with the corner snipped off for easy assembly.
2. Prepare the Components
- Cook and chill: Ensure your vermicelli noodles are fully cooled, dry, and cut into manageable lengths (about 2 inches long) so they don't pull out in one giant clump when eating from a glass.
- Chop: Keep your diced cucumber, julienned carrots, and chopped herbs ready in small prep bowls.
3. Assemble the Verrines
- Layering order for 4 small glasses or verrines:
