Fusion Recipe: Kulfi-Infused Trifle

Kulfi-Infused Trifle

Kulfi-Infused Trifle is an exquisite fusion dessert that layers traditional South Asian flavours with the classic English trifle format. It features luscious layers of cardamom- and pistachio-infused custard, delicate sponge cake soaked in rosewater syrup, whipped cream, and a generous garnish of chopped nuts and edible rose petals. Each spoonful offers a luxurious, creamy texture coupled with the unmistakable aromatic warmth of saffron, cardamom, and toasted pistachios.

Ingredients

For the Saffron-Cardamom Custard:

  • Milk: 2 cups full-fat milk
  • Heavy Cream: 1 cup heavy whipping cream
  • Condensed Milk: 1 can (397g) sweetened condensed milk
  • Cornstarch: 3 tablespoons (for thickening)
  • Flavourings:
    • 1 teaspoon ground green cardamom
    • A generous pinch of saffron threads (steeped in 1 tablespoon of warm milk)
    • 1 teaspoon rose water

For the Cake & Soak:

For Assembly & Topping:

  • Whipped Cream: 1.5 cups chilled heavy cream whipped with 2 tablespoons of icing sugar
  • Pistachios: ½ cup unsalted pistachios, finely chopped and toasted
  • Almonds: ¼ cup slivered almonds, toasted
  • Garnish: Dried edible rose petals and a few extra saffron threads

Instructions & Method

Step 1: Make the Kulfi-Infused Custard

  1. In a medium bowl, whisk together a small splash of the milk with the cornstarch until smooth.
  2. In a heavy-bottomed saucepan, combine the remaining milk, heavy cream, and sweetened condensed milk over medium heat. Bring to a gentle simmer, stirring frequently.
  3. Pour the cornstarch slurry slowly into the simmering milk mixture while whisking constantly.
  4. Cook for 5–7 minutes until the mixture thickens into a smooth, custard-like consistency.
  5. Remove from heat and stir in the ground cardamom, steeped saffron (with its liquid), and rose water. Pour into a bowl, cover the surface directly with plastic wrap to prevent a skin from forming, and chill in the refrigerator for at least 2 hours.

Step 2: Prepare the Rosewater Soak

  1. In a small saucepan, combine the water and sugar. Heat gently until the sugar dissolves completely.
  2. Remove from heat and stir in the rose water and optional pink food colouring. Let it cool to room temperature.

Step 3: Layer the Trifle

  1. In a large glass trifle bowl or individual serving glasses, arrange a base layer of cubed sponge cake.
  2. Lightly drizzle the cake cubes with the prepared rosewater soak so they are moist but not soggy.
  3. Scatter half of the toasted chopped pistachios and slivered almonds over the cake.
  4. Pour half of the chilled kulfi custard evenly over the nut and cake layer.
  5. Repeat the layers with the remaining cake, rosewater drizzle, remaining nuts, and the rest of the kulfi custard.

Step 4: Top and Chill

  1. Pipe or spoon the sweetened whipped cream generously over the top of the trifle.
  2. Garnish the surface with a scattering of remaining chopped pistachios, dried edible rose petals, and a few saffron threads.
  3. Cover and refrigerate for at least 4 hours (or overnight) to allow the flavours to meld together completely before serving.

Chef's Tips

  • Nut Preparation: Toasting the pistachios and almonds beforehand deepens their nutty flavour and adds a wonderful contrast to the soft, creamy custard.
  • Make Ahead: This trifle tastes even better when made a day in advance, as the cake absorbs the fragrant kulfi flavours and becomes incredibly moist.
  • Serving Presentation: Using a clear glass trifle bowl is essential to showcase the gorgeous golden, cream, and green layers of the dessert.
