A delightful bridge between French pastry elegance and nostalgic African comfort, Mazoe Orange Cordial Madeleines infuse traditional, buttery shell-shaped cakes with the unmistakable, bright citrus sweetness of Zimbabwe's favourite orange cordial. Light, tender, and kissed with a golden glaze, these delicate sponge cakes offer a uniquely vibrant twist on a beloved Parisian classic.
Ingredients
For the Madeleines:
- All-purpose flour: 1 cup
- Baking powder: 1 teaspoon
- Salt: 1/4 teaspoon
- Unsalted butter: 1/2 cup (1 stick), melted and cooled slightly
- Granulated sugar: 1/2 cup
- Large eggs: 2 (at room temperature)
- Mazoe Orange Cordial: 3 tablespoons
- Fresh orange zest: 1 teaspoon (to enhance the natural citrus notes)
- Vanilla extract: 1 teaspoon
For the Mazoe Orange Glaze (Optional):
- Confectioners' (powdered) sugar: 1 cup
- Mazoe Orange Cordial: 2 to 3 tablespoons
- Melted butter: 1 teaspoon (for extra shine)
Instructions & Method
Step 1: Prep the Pan and Batter Base
- Generously brush a standard madeleine tin with melted butter and dust lightly with flour (or use a non-stick baking spray). Place the tin in the refrigerator while you prepare the batter; chilling the pan helps create the signature hump on the madeleines.
- In a medium bowl, whisk together the all-purpose flour, baking powder, and salt.
Step 2: Beat the Eggs and Sugar
- In a large bowl, whisk the eggs and granulated sugar together vigorously for 2 to 3 minutes until pale, thick, and slightly fluffy.
- Whisk in the Mazoe Orange Cordial, vanilla extract, and orange zest until well combined.
Step 3: Combine and Rest the Batter
- Gently fold the dry flour mixture into the wet egg mixture using a spatula just until combined (do not over-mix).
- Pour the cooled melted butter around the edges of the batter and gently fold it in until smooth and glossy.
- Cover the bowl tightly with plastic wrap and chill in the refrigerator for at least 1 hour. (Resting the chilled batter in a hot oven is the secret to getting the iconic madeleine hump!)
Step 4: Bake
- Preheat your oven to 375°F (190°C).
- Spoon the chilled batter into the moulded depressions of your prepared madeleine pan, filling each about 3/4 full (do not spread flat; leave them as little mounds).
- Bake for 8 to 10 minutes, or until the edges are golden brown and the centre springs back lightly when pressed.
- Unmould immediately onto a wire rack to cool completely.
Step 5: Glaze (Optional)
- Whisk the confectioners' sugar, Mazoe Orange Cordial, and a splash of melted butter together until smooth.
- Dip the cooled madeleines halfway into the glaze or drizzle it lightly over the top for an extra burst of sweet citrus flavour.
Pro Tips for Success
- Don't Skip the Chill: Chilling both the madeleine mould and the batter in the refrigerator creates the thermal shock needed when hitting the hot oven, which forms the classic raised hump on the back of each shell.
- Pan Care: If using a metal madeleine pan, ensure every nook of the shell design is greased well, as these delicate cakes can stick easily. Silicone moulds work well too, though metal gives a crisper crust.
- Cordial Intensity: Mazoe cordial is quite sweet and concentrated; combining it with fresh orange zest keeps the flavour profile bright and prevents the cakes from tasting overly sugary.
