Spiced Cranberry and Ginger Chutney

Spiced Cranberry and Ginger Chutney is a vibrant, glossy condiment that beautifully bridges tart autumn fruits with warm, aromatic winter spices. The natural sharpness of fresh cranberries is mellowed by the sweetness of brown sugar and caramelised onions, while fresh ginger and zesty orange add a sharp, invigorating kick. Simmered down to a rich, jammy consistency, it makes a versatile accompaniment that elevates everything from holiday roast meats and charcuterie boards to everyday cheese pairings and sandwiches.


Ingredients

  • Cranberries: 3 cups fresh or frozen cranberries (rinsed and sorted)
  • Ginger: 3 tablespoons fresh ginger, peeled and finely minced (or cut into matchsticks for extra texture)
  • Onion: 1 large yellow or red onion, finely diced
  • Orange: Zest and freshly squeezed juice of 1 medium orange
  • Sugar: ¾ cup packed dark brown sugar (adjust to taste for sweetness)
  • Vinegar: ½ cup apple cider vinegar (adds a pleasant tang)
  • Water: ¼ cup water
  • Spices:
    • 1 cinnamon stick
    • ½ teaspoon ground allspice
    • ¼ teaspoon ground cloves
    • ¼ teaspoon ground nutmeg
    • A pinch of salt

Instructions & Method

Step 1: Combine the Base Ingredients

  1. In a medium saucepan, combine the diced onion, apple cider vinegar, water, brown sugar, orange juice, and orange zest.
  2. Place the pan over medium heat and stir until the sugar is completely dissolved and the onions begin to soften (about 4–5 minutes).

Step 2: Add Cranberries and Spices

  1. Add the fresh cranberries, minced ginger, cinnamon stick, ground allspice, ground cloves, ground nutmeg, and a pinch of salt to the saucepan. Stir everything together well.

Step 3: Simmer and Thicken

  1. Bring the mixture to a gentle boil over medium-high heat.
  2. Once boiling, reduce the heat to low so the mixture maintains a gentle simmer. Cook uncovered for 15–20 minutes, stirring occasionally.
  3. As it cooks, the cranberries will naturally pop, releasing their natural pectins and thickening the liquid into a rich, jammy consistency.

Step 4: Cool and Store

  1. Remove the pan from the heat and discard the cinnamon stick.
  2. Taste the chutney and stir in a little extra sugar or a splash of vinegar if you prefer a sweeter or tarter profile.
  3. Allow the chutney to cool completely at room temperature (it will thicken further as it cools). Transfer to a clean glass jar with a tight-fitting lid.

Chef's Tips

  • Texture Control: If you prefer a smoother, more uniform spread, lightly mash some of the cranberries with the back of a wooden spoon partway through the simmering process.
  • Make Ahead: This chutney actually tastes better after resting! Make it 1–2 days in advance and store it in the refrigerator to let the spices deeply permeate the fruit.
  • Storage: Kept in an airtight container in the refrigerator, this chutney will stay fresh for up to 3 weeks. It can also be frozen for longer storage.
  • Serving Suggestions: Serve it chilled or at room temperature alongside roasted pork, turkey, chicken, or as a star addition to a festive cheeseboard with sharp cheddar or brie.
