Fusion Recipe: Stroopwafel Gado-Gado Skewers

Stroopwafel Gado-Gado Skewers

Stroopwafel Gado-Gado Skewers are an inventive culinary masterpiece that bridges traditional Dutch pastry craftsmanship with the vibrant, bold flavours of Indonesian street food. The base of the dish is a unique, crispy savoury wafer—modelled after a thin, unsyruped Dutch stroopwafel infused with subtle spices—providing a sturdy, golden waffle crunch. This wafer serves as an edible skewer-base or crisp topper loaded with classic Indonesian gado-gado elements: blanched vegetables, crispy fried tempeh, and a rich, velvety, tamarind-laced peanut sauce. The result is an extraordinary textural symphony where buttery, waffle-grid crispness meets creamy, spicy, and nutty comfort.

Recipe: Stroopwafel Gado-Gado Skewers

Prep time: 30 mins | Cook time: 20 mins | Yield: 12 skewers

Ingredients

For the Savoury Unsyruped "Stroopwafel" Wafers:

  • Flour: 2 cups all-purpose flour
  • Butter: ½ cup unsalted butter, melted
  • Sugar & Spice: 1 tbsp brown sugar, ½ tsp salt, ½ tsp ground cumin, ¼ tsp white pepper
  • Liquid: ¾ cup warm milk and 1 active dry yeast packet (or 1 tsp baking powder for a quick version)
  • Egg: 1 large egg

For the Gado-Gado Toppings & Skewers:

  • Protein: 8 oz (225g) tempeh, cut into small bite-sized cubes and pan-fried until golden and crispy
  • Vegetables: 1 cup blanched green beans, 1 cup bean sprouts, 1 cup baby spinach or shredded cabbage (lightly steamed/blanched)
  • Garnish: Sliced hard-boiled quail eggs, crispy shallots, and fresh cilantro leaves

For the Thick Indonesian Peanut Sauce:

  • Peanuts: 1 cup smooth natural peanut butter (or freshly ground fried peanuts)
  • Aromatics: 2 cloves garlic, 2 shallots, and 1 small red chilli (minced)
  • Flavour Builders: 1 tbsp sweet soy sauce (kecap manis), 1 tbsp tamarind paste (dissolved in 2 tbsp warm water), 1 tsp lime juice
  • Liquid: ½ cup coconut milk and ½ cup warm water
  • Oil: 2 tbsp vegetable oil for sautéing

Instructions & Method

Part 1: Making the Savoury Wafers

  1. Mix the Dough: In a mixing bowl, whisk together the flour, brown sugar, salt, cumin, and white pepper. In a separate bowl, combine the melted butter, milk, egg, and yeast (or baking powder). Pour the wet ingredients into the dry and mix until a smooth, slightly sticky dough forms. Let it rest for 20 minutes.
  2. Press on a Waffle Iron: Heat a pizzelle maker or a mini waffle iron. Scoop small tablespoons of dough onto the iron and press firmly. Bake for about 40–60 seconds until golden brown, thin, and remarkably crisp. Let them cool completely so they harden into sturdy savoury wafers.

Part 2: Preparing the Thick Peanut Sauce

  1. Sauté Aromatics: Heat vegetable oil in a small saucepan over medium heat. Sauté the minced garlic, shallots, and red chilli until fragrant and lightly caramelised.
  2. Simmer: Stir in the peanut butter, coconut milk, and warm water. Whisk continuously over medium-low heat until the mixture thickens into a rich, glossy paste.
  3. Season: Stir in the sweet soy sauce, tamarind water, and lime juice. Simmer for another 2 minutes until very thick and concentrated (it should cling thickly to a spoon), then remove from heat.

Part 3: Assembly & Skewering

  1. Prepare the Skewers: Thread the crispy, pan-fried tempeh cubes and blanched vegetables alternately onto small bamboo cocktail skewers.
  2. Layer: Lay your savoury spiced "stroopwafel" wafers out on a serving platter. Place a fully loaded vegetable and tempeh skewer directly over or resting beside each wafer.
  3. Drizzle: Generously spoon the thick, aromatic peanut sauce directly over the skewers and vegetables, letting it pool slightly onto the crunchy waffle base. Garnish with crispy shallots, quail egg halves, and fresh cilantro.

Serving & Tips

  • How to Serve: Serve immediately while the savoury wafers retain their crisp snap and contrast with the warm, velvety peanut sauce. Encourage guests to bite into the wafer alongside the peanut-drenched skewers for the ultimate fusion bite.
  • Tip for the Waffles: Ensure your waffle maker is hot and grease it lightly with a touch of oil to prevent sticking, as these unsyruped savoury wafers rely on high heat to achieve a brittle, cracker-like crunch.
  • Tip for the Peanut Sauce: If the sauce thickens up too much while resting, loosen it with a tiny splash of warm water before spooning it over your skewers.
