Tandoori Lamb Cutlet Skewers with Kumara and Mint Raita is a vibrant fusion dish that bridges traditional Indian tandoori flavours with beloved New Zealand root vegetables. Tender lamb cutlets are coated in a spiced, aromatic yogurt marinade, threaded onto skewers, and charred to smoky perfection. They are paired alongside naturally sweet roasted kumara chunks, offering a comforting earthiness that balances the bold, warming spices of the tandoori paste. Finished with a cooling, herbaceous mint raita, this dish delivers an exciting harmony of textures, heat, and freshness.


Ingredients

For the Lamb & Marinade:

  • Lamb Cutlets: 6–8 prime lamb cutlets (trimmed of excess fat)
  • Greek Yogurt: ½ cup plain, full-fat Greek yogurt
  • Lemon Juice: 2 tablespoons fresh lemon juice
  • Garlic: 3 cloves, finely minced
  • Ginger: 1 tablespoon freshly grated ginger
  • Tandoori Spices:
    • 1 ½ teaspoons ground cumin
    • 1 ½ teaspoons ground coriander
    • 1 teaspoon garam masala
    • 1 teaspoon smoked paprika (or Kashmiri chilli powder for a vibrant red hue)
    • ½ teaspoon ground turmeric
    • ½ teaspoon salt (or to taste)

For the Kumara:

  • Kumara (Sweet Potato): 2 medium orange or red kumara, peeled and cut into bite-sized cubes
  • Olive Oil: 2 tablespoons
  • Seasoning: ½ teaspoon ground cumin, salt, and freshly cracked black pepper to taste

For the Mint Raita:

  • Greek Yogurt: 1 cup plain Greek yogurt
  • Mint Leaves: ¼ cup finely chopped fresh mint leaves
  • Coriander: 2 tablespoons finely chopped fresh coriander (cilantro)
  • Cumin: ½ teaspoon roasted cumin powder
  • Sugar/Lemon: A tiny pinch of sugar and a squeeze of fresh lemon juice, to taste
  • Salt: A pinch of salt

Garnish & Serving:

  • Fresh coriander leaves
  • Lemon wedges

Instructions & Method

Step 1: Marinate the Lamb

  1. In a mixing bowl, combine the Greek yogurt, fresh lemon juice, minced garlic, grated ginger, cumin, coriander, garam masala, smoked paprika, turmeric, and salt. Whisk until smooth.
  2. Add the lamb cutlets to the bowl, ensuring each cutlet is thoroughly coated in the tandoori mixture.
  3. Cover and refrigerate for at least 30 minutes (or up to 4 hours for deeper flavour).

Step 2: Roast the Kumara

  1. Preheat your oven to 200°C (400°F).
  2. Place the cubed kumara on a baking tray lined with baking paper.
  3. Drizzle with olive oil, then toss with ground cumin, salt, and pepper until evenly coated.
  4. Roast in the preheated oven for 25–30 minutes, tossing halfway through, until tender and golden-brown at the edges. Set aside and keep warm.

Step 3: Prepare the Mint Raita

  1. In a small bowl, whisk together the Greek yogurt, chopped mint, chopped coriander, and roasted cumin powder.
  2. Season with a pinch of salt, a tiny pinch of sugar, and a squeeze of lemon juice to balance the flavours.
  3. Cover and place in the refrigerator until ready to serve.

Step 4: Cook the Lamb Cutlet Skewers

  1. Preheat a grill pan, barbecue, or oven broiler over medium-high heat.
  2. Thread the marinated lamb cutlets onto dual skewers (or single sturdy metal skewers) so they stay flat and secure during cooking.
  3. Cook the skewers for 4–5 minutes on each side, or until nicely charred on the outside and cooked to your liking (medium-rare to medium is recommended to keep the lamb succulent).
  4. Remove from heat and let them rest for 3 minutes.

Step 5: Plate and Serve

  1. Arrange the warm roasted kumara chunks on a serving platter or individual plates.
  2. Lay the tandoori lamb cutlet skewers over or alongside the kumara.
  3. Serve with a generous dollop of chilled mint raita, fresh coriander leaves, and lemon wedges on the side.

  • Skewering Technique: If using wooden skewers, soak them in water for at least 30 minutes prior to assembling to prevent them from burning on the grill or under the broiler.
  • Cutlet Placement: Threading two skewers parallel through each cutlet prevents the meat from spinning around when you try to flip them on the grill.
  • Kumara Variety: While orange kumara adds a vibrant colour and sweetness, red or gold kumara varieties also work wonderfully and hold their shape well when roasted.
  • Make Ahead: You can mix the raita and marinate the lamb a few hours in advance to make the final cooking process quick and seamless.
