Vadas Shashlik brings together the rugged, smoky perfection of Kyrgyz beef shashlik (kebabs) and the sophisticated, velvety richness of a traditional Hungarian vadas sauce. While classic shashlik relies on simple marinades and open-fire char, vadas is a legendary Hungarian game-meat sauce known for its deep, root-vegetable sweetness and bright, tangy punch of mustard and lemon. Pairing the charred, juicy beef skewers with this creamy, golden-hued sauce creates a magnificent interplay of campfire smokiness and refined, savoury-tart depth.

Ingredients

For the Kyrgyz Beef Shashlik:

  • Beef: 2 lbs (approx. 900g) beef sirloin or ribeye, cut into uniform 1.5-inch cubes
  • Onions: 3 large yellow onions, finely sliced or grated (crucial for tenderising)
  • Aromatics & Spices: 1 tsp whole cumin seeds, 1 tsp coriander seeds (lightly crushed), 1 tsp black pepper, 1 tsp salt
  • Acid & Oil: 2 tbsp red wine vinegar or lemon juice, 2 tbsp vegetable oil
  • Optional: Wooden or metal skewers (soak wooden skewers in water for 30 mins prior)


For the Hungarian Vadas Sauce:

  • Root Vegetables: 3 large carrots, 2 parsnips, and ½ a small celery root, peeled and diced
  • Aromatics: 1 small yellow onion (chopped), 2 tbsp unsalted butter, 1 tbsp sugar (for caramelising)
  • Flavour Builders: 1 tbsp Dijon or sharp yellow mustard, 1 tbsp fresh lemon juice, 1 bay leaf
  • Liquid & Creaminess: 2 cups beef stock, ½ cup heavy cream or sour cream (tejföl), 1 tsp all-purpose flour (optional, for extra thickening)


Instructions & Method

Part 1: Marinating the Shashlik

  1. Combine the Marinade: In a large bowl, mix the sliced/grated onions, crushed cumin, coriander, black pepper, salt, vinegar, and vegetable oil. Squeeze the onions with your hands first to release their juices.
  2. Coat the Beef: Add the cubed beef, tossing well to ensure every piece is completely submerged in the onion mixture.
  3. Marinate: Cover and refrigerate for at least 4 hours, but ideally overnight (12–24 hours). The natural enzymes in the onions will tenderise the meat.

Part 2: Making the Hungarian Vadas Sauce

  1. Caramelise & Sauté: In a saucepan, melt the butter over medium heat. Add the sugar and let it turn into a light golden caramel. Add the chopped onions, carrots, parsnips, celery root, and bay leaf. Sauté for about 10 minutes until the vegetables soften and take on colour.
  2. Simmer: Pour in the beef stock, cover, and let it simmer for 25–30 minutes until the root vegetables are completely tender. Remove the bay leaf.
  3. Blend and Enrich: Puree the vegetable mixture using an immersion blender until completely smooth and velvety. Stir in the mustard, lemon juice, and heavy cream (or sour cream). Simmer gently for another 3–5 minutes. If needed, whisk in a splash of water or a tiny pinch of flour to reach your desired gravy consistency. Keep warm.

Part 3: Grilling the Shashlik & Serving

  1. Skewer the Beef: Thread the marinated beef cubes tightly onto skewers, brushing away any large chunks of raw onion to prevent burning.
  2. Cook: Grill the skewers over hot charcoal (traditional style) or in a screaming-hot cast-iron grill pan indoors for about 10–12 minutes, turning frequently until nicely charred on the outside while remaining juicy and medium-rare to medium on the inside.
  3. Plate: Spoon a generous pool of the warm, golden Vadas sauce onto a plate, lay the sizzling beef shashlik directly over or beside it, and serve hot.


Serving & Tips

  • How to Serve: Garnish the plate with a little fresh parsley or a slice of lemon. Dip the smoky beef directly into the tangy, sweet-and-sour root vegetable sauce for the ultimate bite.
  • Tip for the Sauce: For an ultra-silky texture, pass the blended Vadas sauce through a fine-mesh sieve before stirring in the cream.
  • Tip for the Skewers: Do not crowd the meat too tightly on the skewers; leaving tiny micro-spaces ensures the heat hits all sides evenly for that authentic barbecue crust.
