Bran Muffins with Flax and Zucchini

Bran Muffins with Flax and Zucchini

These hearty, wholesome bran muffins combine the rich, nutty flavour of wheat bran with nutrient-dense ground flaxseed and freshly grated zucchini. Naturally moist and packed with dietary fibre, they make an energising breakfast or snack designed to support long-term heart health and digestive wellness.

Ingredients

  • 1 cup wheat bran (exceptionally high in dietary fibre to help lower cholesterol levels)
  • 1 cup whole-wheat flour or oat flour (provides complex carbohydrates and steady energy)
  • 1/3 cup ground flaxseed (loaded with alpha-linolenic acid, a plant-based omega-3 fatty acid beneficial for cardiovascular health)
  • 1 tsp baking soda & 1 tsp baking powder (for a light, tender rise)
  • 1.5 tsp ground cinnamon & 1/4 tsp sea salt (for warm flavour and balanced seasoning)
  • 1 cup grated zucchini, gently squeezed of excess moisture (adds hidden hydration, vitamins, and minerals)
  • 1/3 cup pure maple syrup or raw honey (natural unrefined sweeteners)
  • 1/3 cup unsweetened applesauce (replaces heavy butter or oil while keeping the muffins soft)
  • 1/4 cup extra-virgin olive oil or melted coconut oil (delivers heart-healthy monounsaturated fats)
  • 2 large eggs (or flax eggs for a plant-based alternative)
  • 1 cup unsweetened almond milk (or milk of choice)
  • 1 tsp pure vanilla extract
  • Optional mix-ins: 1/4 cup chopped walnuts or raw pumpkin seeds (provides an extra boost of healthy fats and plant sterols)

Instructions & Method

  1. Preheat and Prep: Preheat your oven to 375°F (190°C). Line a 12-cup standard muffin tin with paper liners or lightly grease it with non-stick coconut oil spray.
  2. Combine Dry Ingredients: In a large mixing bowl, whisk together the wheat bran, whole-wheat flour, ground flaxseed, baking soda, baking powder, cinnamon, and sea salt until thoroughly blended.
  3. Mix Wet Ingredients: In a separate medium bowl, whisk together the grated zucchini (remember to squeeze out extra liquid with a clean towel first), maple syrup, applesauce, olive oil, eggs, almond milk, and vanilla extract until smooth.
  4. Combine Wet and Dry: Pour the wet ingredients into the dry ingredients. Stir gently with a wooden spoon or spatula just until combined—do not over-mix. If using walnuts or pumpkin seeds, fold them in gently at this stage.
  5. Fill the Muffin Tin: Divide the batter evenly among the 12 muffin cups, filling them nearly to the top since bran muffins don't rise as dramatically as traditional cakes.
  6. Bake: Bake in the preheated oven for 18 to 22 minutes, or until a wooden toothpick inserted into the centre of a muffin comes out clean.
  7. Cool and Serve: Allow the muffins to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely. Enjoy warm or store for a quick grab-and-go breakfast.

Tips for Success & Heart Health

  • Maximise Fibre for Cholesterol Support: Wheat bran and ground flaxseed provide an abundant blend of soluble and insoluble fibre. Soluble fibre binds to cholesterol in the digestive tract, helping the body excrete it and keeping your heart arteries clear.
  • Harness Plant-Based Omega-3s: Ground flaxseed is an exceptional source of ALA (alpha-linolenic acid), a plant-based omega-3 fatty acid that helps reduce systemic inflammation and supports healthy blood pressure regulation.
  • Swap Saturated Fats for Healthy Oils: Using extra-virgin olive oil and applesauce instead of large amounts of butter reduces saturated fat intake, which is a key dietary strategy for preventing heart disease and maintaining optimal cholesterol ratios.
  • Squeeze the Zucchini: Zucchini is naturally full of water; pressing it gently with a towel before mixing it into the batter prevents the muffins from becoming soggy and ensures a dense, perfectly moist crumb structure.
